To keep the inventory fresh and balanced on top of forecasting for resupply for a 24 hour/round the clock restaurant is ridiculously hard to manage. Bravo to the meticulous management with this lead chef.
This place is busy all the time. There is always a long line, no matter what time of the day it is. The food is amazing and it's also a great value. The bouillabaisse is my favorite.

During CES 2024, I stayed at Palace Station Hotel and Casino for an entire week. I spent most of my time in Las Vegas, either at the convention center or staying up really late at night writing in my hotel room. I ate at every eatery at the hotel and The Oyster Bar was the best! It's off the strip, but worth the visit just for The Oyster Bar!
What no way! I love this spot. Also palace station still lets you touch your cards at the blackjack table! Happy to see them getting some love! My parents have been going there for years. I been trying to find the recipe for the gumbo for years but can’t find it.
I honestly would love to be part of the graveshift crew. I like the setup of the line. Plus, I have respect for the oyster supplier for banding the shellfish. I always found it a pain when my team doesn't check daily to make sure the oysters haven't lost their liquor.

My go to order at 3 am is a dozen oysters and a shrimp and crab pan roast.
Came here about 6 years ago at like 1am and waited in like about 30 - 45 min but had one of if not the best meals in my life.
