Salt and Pepper Chicken Wings THE BEST RECIPE

- Ingredients:
* Adjust measurements accordingly
- 1 lb chicken wings and drummettes
- 1 cup cornstarch
- 1 cup all purpose flour
- 6 cloves garlic
- 2 jalapenos
- 2 green onions
- neutral-flavored frying oil (e.g. canola or peanut oil)
- 1 egg white
- 1 tbsp soy sauce
- 1 tbsp shaoxing rice cooking wine
- 2 tsp white pepper
- 2 tbsp salt
- 2 tbsp black pepper
Instructions:
1) Cut the tips off the chicken wing. Discard or save for stock.
2) At the joint, separate the wings from the drummette. Place the both into a bowl.
3) Marinate your chicken with an egg white, soy sauce, cooking wine, white pepper and cornstarch. The marinade should be slightly wet as it'll help the dry batter stick to the chicken.
4) Slice your jalapeños.
5) Mince your garlic.
6) Slice your green onions.
7) In a separate bowl, mix equal parts cornstarch and flour. This will serve as the dry batter.
8) Evenly coat your chicken wings and drummettes in the dry batter. Shake off any excess.
9) Deep fry your chicken at 375F for 8 to 10 minutes. Once done, remove and set aside.
10) Don't overcrowd the wok. Once a batch is done cooking, remove any fried tidbits from the oil and reheat the oil for the next batch.
11) Stir-fry your jalapeños, garlic and green onions until slightly brown. Optionally add some butter for some extra depth of flavor.
12) Add you cooked chicken.
13) Season with salt and pepper.
14) Toss to mix. Voila you're done!

Dont ever throw the tip away... save it for stock or fry them separately and enjoy as a snack... that's the best part

There was a local restaurant here that was voted "Best Wings of Seattle" I LOVE their wings! After seeing this video, I decided to give it a try and make this at home. OMG! The taste of these wings were almost identical to the wings I love so much at the restaurant!

So I don’t have a burner like yours so what kind of pan should I use instead of a wok? (My burners are the standard electric ones that will just concentrate all the heat on the bottom part of the wok and give none to the rest)
As far as deep frying, any pot like one you would cook spaghetti in will do. As far as cooking the garlic, green onions, jalepenos and then mixing them with the chicken, any non stick pot or pan would work. I just say non-stick to avoid potentially burning the garlic. But honestly anything big enough will do!!!
Also I use a flat bottom wok on an electric stove at my school apartment. Not sponsored 😂 but if you're interested in getting one I love my 14 inch Joy Chen flat bottom wok!

Buy fried chicken from Popeyes, Chick-fil-a or KFC and mix it in a pan with the garlic, jalapenos, green onions and butter haha?? 😂 On a serious note though, cooking the chicken takes the longest so after that it's just a matter of mixing tossing everything together.

Hi thanks for your comment. I got mine off eBay but can't recommend the company cuz it's had a leak since day 1. I've seen similar 13 inch burners on Webstaurantstore and Amazon. You can buy natural gas or a propane setup
