    Seco de pollo is a traditional Ecuadorian Chicken stew. This probably is the best chicken stew I have ever had. It is so flavorful, soft and juicy. I am traveling right now in Ecuador. I also found some interesting ingredients and learned new cooking technique.
    This is the first Ecuadorian food that I shared- hope to make more in the future. The reason I decided to make it is because this dish is everywhere in Ecuador. It is the most popular dish at least from what I see.

    *Ingredients for the Dry Rub*
    - 4 Chicken thighs (About 2 pounds)
    - 2 tsp of salt
    - 2 tsp of paprika
    - 1.5 tsp of black pepper
    - 1 tsp of ground cumin
    *Ingredients For Stir Fry*
    - 3 tbsp of achiote oil (Can be switch with chili oil or just regular cooking oil) [Amazon Achiote powder: geni.us/Rx2JwZZ]
    - 1/2 of onion, minced
    - 1/2 of green bell pepper, minced
    - 4 cloves of garlic, minced
    - 1/4 cup of cilantro stem
    - 2 tsp of Aji pepper seco, It is a hot chili powder. You can replace it with caryenne
    - salt to taste
    *Ingredients for vegetable mix*
    - 2 medium-size tomatoes, quartered
    - 1/2 of a medium size onion, cut into chunks
    - 1 bunch of cilantro, reserve some to add at the end
    - 1 bunch of parsley, leaves only, reserve some to add at the end
    - 4 cloves of garlic
    - 2 cups of beer, don’t use black beer, I think it will turn out bitter.
    - 1/2 cup of orange juice
    *Other ingredients and Sides*
    - Salt and pepper to taste at the end
    - 1 big potato, cut into chunks
    - Yellow achiote rice
    - Fried ripe plantains
    - Avocado slices
    - Small side salad if you have it
    INSTRUCTIONS
    - Rub the chicken thighs with 2 tsp of salt, 2 tsp of paprika, 1.5 tsp of pepper and 1 tsp of cumin seed. Rest for 30 minutes.
    - In a blender, add 2 medium-size tomatoes, 1/2 of a medium-size onion, a bunch of parsley, a bunch of cilantro, 4 cloves of garlic, 2 cups of beer, and 1/2 cup of orange juice.Blender until smooth. Set it aside.
    - Get a pot. Add about 3 tbsp of achiote oil. (I think it is achiote seeds simmered in vegetable oil so the oil is infused with that red color. I am not sure if this is special in Ecuador. If you can’t find this, you can try with chili oil. Because achiote has a sort of peppery aroma and It tastes a little bit earthy. Chili oil won’t be exactly the same but it should work fine. )
    - Now back to cooking. I am adding 4 cloves of minced garlic, 1/2 of minced bell pepper, 1/2 of minced onion. Give them a few stir. Add some diced cilantro stem. You can also use cilantro leaves or parsley leaves here.
    - Use medium heat; stir this until the onion becomes transparent.
    - Push everything to the side so the chicken will directly touch the bottom. Add the chicken one by one. Let it fry for few minutes on medium heat. When you see the chicken gets that brown color. That is what we are looking for. Flip all the chicken over and fry the other side.
    - Pour the beer & vegetable mixture. Give it a few stir to make sure there is nothing sticking to the bottom.
    - Cover it and bring this to a boil. Add 2 tsp of Aji seco powder and some salt. If you cannot find aji seco powder, you can try to mix some paprika with onion and rice powder. The color won’t be exactly the same but I have tried it, it tastes good too.
    - Stir the pot and make sure the Aji seco powder is evenly dissolved. Give it a taste to see if it needs more salt. Mine does so I add a little more. Totally, I add about 2.5 tsp of salt here not including the salt that I rub the chicken with.
    - Cover it and use the lowest heat to simmer it for 1 hour and 30 minutes.
    - Add some potato chunks and let it simmer for 20 minutes more or until the potato is cooked through.
    - The last step, add some diced cilantro and parsley. Mix it well and you are done.
    Serve with yellow rice, fried plantains, and avocado. Spoon the sauce over the plate. You are ready to eat.

      You haven't tried my Mom's special Seco de Pollo with boneless chicken breast pieces. It is definitely deelish and she makes her own refrito sauce, or Ecuadorian sofrito!!

    Mandy that looks great! I have some suggestions on Alternatives of what you made in this recipe that could help the viewers here. You can make achiote oil by putting a half a cup of oil 2 to tablespoons of achiote seeds in a saucepan on medium-low heat heat it up once the oil starts to sizzle a bit the color will release you want to be very careful and watch it closely or the achiote seeds will turn green and then you will have to throw it out. then strain the oil in a sieve. Also for the coloring Ahi para seco you can use Goya Sazon with culantro it has the same color and will give the same results.

    Looks delicious! Must of Latin people use achiote for cooking to give color to the food. You can buy the achiote seed and heat it up with oil for a few minutes to get that nice red color. Thanks for sharing ❤️

    It is easy to make achiote oil by letting annatto seeds steep in hot oil. The seeds are usually available from Asian stores.

    Aciete de Achiote is Annato Oil. Achiote is Spanish for Annato. Filipinos use achiote to color food and bring out taste of chicken. A popular barbeque chicken food chain in the Philippines market their Annato Oil mixture as Chicken Oil.

    Encocado de pollo, seco de chivas and ceviche de camarones were my favorite Ecuadorian meals. You should also try lomo saltado, its Peruvian chifa cuisine, but you can probably find it in Ecuador. I'm so jealous, I loved Ecuador, I can't wait to go back

    Usually the chicken is seasoned with the achote not paprika and we use naranjilla instead of orange juice but other than that, very traditional, looks yum

    When I was growing up in Guayaquil, we made our own achiote oil from seeds and vegetable oil. It's not difficult, but if you can't find the achiote seeds, you should use saffron oil.

    FYI fun fact for anyone who (like me) could never understand why anyone would eat cilantro. If it tastes like dish soap to you too, then you are allergic to it. I stumbled onto this in some "you may not know it's an allergy" article. I never knew....but now it makes sense. That said, this looks great. Long as I leave the dish soap, um cilantro, out of it ;) lol

    Hi i loved your method of preparation of this dish. You are missing the secret ingredient. Mustard! Its a secret bc most people would think its not something that should go in this dish but i garuntee that if you use about 3 tablespoons of mustard when cooking you will be transported to heaven. You could probably use mustard powder but mustard is a little but easier to find. Thats the single flavor that makes this dish unique. My grandmother used it and its her most memorable dish

    Great recipe just one thing the Seco does not have potatoes because it will turn it into a stew. I know people from other regions of the country prepares the Seco adding potatoes but the original recipe does not call for it; Great job.

    Hi, nice videos you have. Really inspirational for cooking homemade food. I want to ask what oven did you use in the Char Siu recipe video? I want to have a small oven like yours so can bake food with small amount of kitchen space, and i'm hoping for oven that can microwave food. I hope you reply to my question, thanks so much.

      Hey, the oven I used is a Chinese brand (It is really bad and I would not recommend it) You can look for other brands such as Midea, Petrus, they all have small size oven.

      Sidney Mathious Go to a Latin or west Indian grocery. You could also find ingredients online like Amazon or Google Latin grocery.
      Nothing packaged is difficult to get anymore.

      Good thing you are so talented at cooking EVERYTHING!!! Maybe you can try the US, esp after the next election (sigh). Several of my neighbors had no problem coming here, but that was a few years back. But hope you are happy in your Ecuador adventure!

      By the way, seco comes from the word secundo. The main dish of a typical lunch (almuerzo typico) and the primero is usually a tasty and filling soup. Great soups here too. Now come back to the coast and show us how to do fish!

    Mixing beer is it not bitter for kids?

      Use lager or pilsen beer. The alcohol evaporates and you are left with a smooth flavour. Dark beers are going to make it bitter so it's a better idea to not use that.

    NIce presentation. However, traditional "SECO" of pollo, chivo, etc. DOESN'T have potatoes. If you add potatoes as you did, now is a stew no seco.
    Your stew looks delicious though.

      Yes. I did Souped Up Recipes a lot. I think she's a darling, but the vernacular is off sometimes. I love her youtube channel and look forward to more videos. If she had a producer, she would be rocking the big time. Think of Martin Yan.
