You haven't tried my Mom's special Seco de Pollo with boneless chicken breast pieces. It is definitely deelish and she makes her own refrito sauce, or Ecuadorian sofrito!!
Mandy that looks great! I have some suggestions on Alternatives of what you made in this recipe that could help the viewers here. You can make achiote oil by putting a half a cup of oil 2 to tablespoons of achiote seeds in a saucepan on medium-low heat heat it up once the oil starts to sizzle a bit the color will release you want to be very careful and watch it closely or the achiote seeds will turn green and then you will have to throw it out. then strain the oil in a sieve. Also for the coloring Ahi para seco you can use Goya Sazon with culantro it has the same color and will give the same results.
Aciete de Achiote is Annato Oil. Achiote is Spanish for Annato. Filipinos use achiote to color food and bring out taste of chicken. A popular barbeque chicken food chain in the Philippines market their Annato Oil mixture as Chicken Oil.

Encocado de pollo, seco de chivas and ceviche de camarones were my favorite Ecuadorian meals. You should also try lomo saltado, its Peruvian chifa cuisine, but you can probably find it in Ecuador. I'm so jealous, I loved Ecuador, I can't wait to go back
I love your recipe is similar to Panamanian stew chicken. I eat this dish a lot, is a staple in Panama, along with the rice and the fried sweet plantains.

Usually the chicken is seasoned with the achote not paprika and we use naranjilla instead of orange juice but other than that, very traditional, looks yum

When I was growing up in Guayaquil, we made our own achiote oil from seeds and vegetable oil. It's not difficult, but if you can't find the achiote seeds, you should use saffron oil.

Hi i loved your method of preparation of this dish. You are missing the secret ingredient. Mustard! Its a secret bc most people would think its not something that should go in this dish but i garuntee that if you use about 3 tablespoons of mustard when cooking you will be transported to heaven. You could probably use mustard powder but mustard is a little but easier to find. Thats the single flavor that makes this dish unique. My grandmother used it and its her most memorable dish
FYI fun fact for anyone who (like me) could never understand why anyone would eat cilantro. If it tastes like dish soap to you too, then you are allergic to it. I stumbled onto this in some "you may not know it's an allergy" article. I never knew....but now it makes sense. That said, this looks great. Long as I leave the dish soap, um cilantro, out of it ;) lol

It is easy to make achiote oil by letting annatto seeds steep in hot oil. The seeds are usually available from Asian stores.
