I'm definitely gonna need to practice this a few more time. Is there a way to add vertices with out subdividing? I'd like to be able to place them in random places and move them around like you can when placing loop cuts.
hmm well you can do a smaller subdivide within a selection so for example I could select 2 vertices that make up an edge, right click then press subdivide to add another vertex between the 2. You can also press shift a in edit mode and choose single vertex, then you can press f with it and the vertex you want to connect it to selected to join things up. hello, the option for loop tools doesn't appear when i right click after selecting the faces, is there a way to fix this?
Go to Edit -> Preferences -> add-ons
then search for Mesh: LoopTools and activate it

You're scaling things with increments but you don't have increments enabled?
also when i do gridfill it does it at a angle that doesn't line up with everything else
In the bottom left hand corner, after grid fill a grid fill menu will appear, you can change the alignment using Offset
