Long-haired old country boy here. This is a good way to use leftover potatoes. I will try it. If you have an overripe banana, mash it and mix it with one egg and 2/3 cup of oatmeal to make 2 nice sized pancakes. Walnuts, vanilla, and cinnamon are good in these.

Yesterday I did pancakes from a packet and they were much better than the thin ones we used to make, served them with honey not syrup, much better too!!

From the US. My grandmother made something similar using mashed potatoes. I make both ways, grated potato or mashed. Sometimes adding onion powder into mine. I serve with sour cream and applesauce.
Look delicious! I have made potato pancakes many times but have to make a larger amount. I grate on the larger side of the grater. Put the potatoes in cold water to keep from turning brown. Then rinse a couple times to remove extra starch. I drain it well then put in a clean white flour sack dish towel and wring it to remove as much water as I can. Then I add a couple beaten eggs, a little S/R flour, s+p and chopped green onions or you can use white sweet onion (Vidalia). Then fry out in little patties just like yours! I’m 3/4 Polish and make Bellini’s (potato pancakes) same way minus the mozzarella cheese.
