    My favorite sinigang Is Salmon Sinigang with Miso. The miso complements the salmon flavor really well plus the the sour and gingery broth is just the best!

    Thank you for making me part of this and inviting me on your IG live.
    I was shock that all of a sudden I was invited to join the livestream. I should have not remove the bell pepper just to mess up the sinigang.
    I was also unaware that the protein you'll use is shrimp so my Gabi Suggest won't work. hahahaha

    I loooove sinigang!!! It's pure comfort food and helps get me through the dark rainy Canadian winters here in Vancouver Island. I use salmon, spot prawn, halibut or trout with kalamansi or lime as the souring agent. I always add a teaspoon of sugar to help balance the acidity. My husband loves beef sinigang but I use tamarind paste for it instead of kalamansi or lime because it imparts a caramel-like flavour. Fresh tamarind is a rarity here so I hoard it when I'm lucky enough to find it.

    Try doing a Sinigang here in Europe with local ingredients. Every Filipino community abroad prob had to adapt and does it differently. I'm based in Austria; our home-made Sinigang is quite different - obviously influenced by local ingredients available here.

      @Nerdy Panda all the souring agents Erwan mentions are not easy to get here (if at all), but lemon is. Gabi is also not available here, so we use potatoes instead. As for vegetables, the bandwidth is broad from all kinds of root vegetables (radies, radish, knob celery, ...) to all sorts of cabbage varieties.

    Your guava is a bit big. The guava we use are small and really sour. Though it is a good thing that there are other souring agent options as well. We also use sampalok (for chicken) and kamias (for shrimp).

    yes.. there's a chicken sinigang.. its more of the sinampalukang manok actually... i love a good sinigang.. 😋 one of my fave pinoy dish ever..👍👍👍

    Here in Bicol we have this Paksiw na Baka/Vaca. It's actually like beef sinigang without veggies, and we use Lubas/ Libas leaves as the souring agent. People usually enjoy it with not just beef meat but also with laman loob ng baka. :)

    if you want your sinigang to have some thickness for the soup replace your water from rice water (hugas bigas) to have some body for your sinigang soup.
    sinigang na manok (sinampalukang manok) usually has ginger and native petchay usually we use native chicken with chicken blood, gizard and liver, for better flavor.

    Erwan sinigang sa bayabas kilalang dish dito yan sa pampanga, tawag nyan dito sa amin is bulanglang di naman linalagyan ng sampaloc or dried kamias puro bayabas lang dapat tapos medyo hinog na bayabas ginamit mo tas pakuluin mo sya yung durog na durog pde mo rin alising yung buto ng bayabas pero nasayo na yun.

    We have the trees of kamyas, sampalok, mango, bayabas and santol in my province and we would use one of those for pampaasim. I really love sinigang but I've nver tried it with bayabas.

    funny...I am cooking Bangus Sinigang while watching this 😆.. for me Batuan would be the best souring agent (im from Bacolod obviously).. love it.. with a hot chilis to spice it up..
    nice to know:
    -use Long Chili (Siling Haba/Paitan) to lessen the “Malansa” flavor of the fish
    -take out the bubbles produced after boiling that’s the “Malansa” part 😊

    Sinigang na pusit (squid) with sour mangoes is top notch as well ;) Squid or fish malaga (sorry not sure how that one is called in English or Tagalog, but this fish is a very common sinigang variety here in Pangasinan)

    In the US, it’s not common to see shrimp with heads on but in the Philippines it is. I cooked this shrimp sour soup one time for my husband and it was really weird for him to see cooked shrimps with heads on..I miss this recipe.

    Well i think if u like chicken in sinigang as far as i know it call sinampalukan it is a chicken with sour soup but it has a tamarind leaves na tinadtad as far as i remember that sa souring agent for it. There is different kind of sinigang if its pork it added gabi souring agent its either tamarind or guava, if fish it added miso it call sinigang sa miso and seafood are simple tamarind .

    For Sinigang sa bayabas, better use ripe small guavas. Smells funky but taste really good especially with pork belly or bangus! 🤤😋

    You need to try Sinigang Native Chicken using green siniguelas
    by Balbas of natividad And Sinigang Tuyo of apung Marshall of Balubad using ripe guava all Guagua pampanga area( lambac , natividad , ebus etc)

    chicken sinigang is awesome too, you can use mustasa for veggies with radish and tomato, or cook like how you cook sinigang sa miso but of course, without the miso and use chicken instead of fish.

    Good stuff but in Pampanga they do bulanglang made with ripe guava with port spareribs or shrimp really popular. My mom do it often soo good sweet. Maybe you can cook it next time thank you.

    We grew up with carrots in our sinigang (it was our grandmother's way of making the kids eat veggies😉) and it's okay. You should try it.

    the guava variety you used is called guaple, a hybrid of guava and apple(?), which doesn't taste sour. The smaller native type is sour, especially before it ripens. fyi

    Great concept. BTW you're using the wrong guava which is the big white fleshed type. Should be using the traditional pink fleshed guava.
    Doesnt hurt to combine a few souring agents like camias.
    Shrimp and large flesh fish would make a great sinigang. Another bowl Fatty pork belly too.

    For Chicken Sinigang it's called Sinampalukang Manok for this you'll use sampaloc and the usbong (leaves) 😉

    Oh no, mali yung bayabas! First thing I noticed when I started the vid. We used to have both hard/big and soft/small guavas when I was small. Sinigang sa Bayabas is always with the small ones, same ones you use for guava jam. 😂

    I’m just wondering if I can give you one of my favourite ingredients of sinigang. Myself and my dads sinigang is one of the best. He used leaves/flowers of tamarind. He used this with the sinigang na kambing. How I wish u can try this ingredients.

    I prefer sinigang na piniritong galunggong sa kalamansi na may talbos ng kamote. Sarap nakakamis. Walng talbos kamote sa qatar. 😅

    I don't think there ever was a "traditional" Sinigang. Even from my amature research on the matter (had to submit a written assignment for school), the dish has simply been around with so many variations everywhere in the Philippines prior to Spanish colonial era, hence the lack of any documentation. The only thing we know about the dish is it's a Tagalog term which means "to stew" or "to boil". I think that's one of the things that makes Filipino dishes unique. Due to our geography and our rich history, any Filipino dish is kind of adapted to the province or household oftentimes out of necessity. Although I absolutely love the concept of this video, please feel free to ignore comments telling you that there is a "traditional" way of preparing majority of Filipino dishes because there really is none. Kahit nga adobo dito na sa Pilipinas iba iba rin ang lasa, ingredients or luto depende sa nanay na nagluluto.
