Hello everyone! In this video, I will show you how to make Labneh Balls, a delightful and long-lasting treat made from fresh milk. This recipe is perfect for when milk is abundant and can be preserved for up to a year. Follow along to learn the secrets to making and preserving these delicious Labneh Balls! 🍽️
Ingredients:
7 kg fresh milk 🥛
200 grams yogurt (or 1 heaping tablespoon per kilo of milk) 🥄
Rock salt 🧂
Olive oil (or a mixture of regular oil and olive oil) 🫒
Method:
Heat the Milk: Pour 7 kilos of fresh milk into a pot. Heat it until it reaches 45°C (113°F). If you don't have a thermometer, you can test the temperature by dipping your finger in the milk; if you can tolerate it for ten seconds, it's the right temperature. 🔥
Add Yogurt: In a separate bowl, mix a little milk with 200 grams of yogurt until smooth. Then, combine this mixture with the heated milk and mix well. Cover and place in a warm spot until the milk solidifies, which may take up to 24 hours. 🥣
Drain the Whey: Once the milk has solidified, use a strainer lined with cheesecloth to drain the whey. Hang the cheesecloth with the curdled milk in a cool place for 24 hours to ensure all the liquids drain out. 🧵
Add Salt: After draining, add rock salt to the labneh. Avoid iodized salt as it can cause spoilage. Mix well and shape the labneh into balls. If needed, drain further using the cheesecloth and a weight. ⚖️
Shape and Dry: Shape the labneh into balls of your desired size. Place them on kitchen towels to absorb any remaining moisture, changing the towels as needed until they are completely dry. 🍥
Preserve in Oil: Place the dried labneh balls in a glass container and cover them with olive oil. You can also use a mixture of regular oil and olive oil if you prefer. Ensure the container is airtight to keep the labneh fresh. 🫙
Optional Additions: For added flavor, you can mix in thyme, black seed, or chili pepper when shaping the labneh balls. 🌿🌶️
