They will start growing shoots if you keep them in a damp/humid environment. Some are radiation treated to prevent this and increase shelf life. Earlier, people used to hang them in a sunny spot in their kitchen. Some still do. Not everything needs to be dumped in the fridge. People lived a sustainable lifestyle before the fridge was invented. In fact, other than leafy greens which are delicate, most other veges and fruits can be stored in an open, dry container in your kitchen.

Eggs should be washed as salmonella bacteria also lives on the outside of the eggs. Once cooked, they should be eaten asap, or stored in refrigerator.
I think it makes the herb to last longer. You can easily achieve it by using a mason jar with a towel on the bottom with .5in of water to do it. Lastly, use a sandwich bag to loosely cover the top of your herb.
