How To Make Cilantro Lime Rice | Easy Cilantro Lime Rice Recipe

  • Here is an easy and delicious way to get your cilantro lime rice fix. This goes great as a side to enchiladas, baked chicken or your favorite tacos. Enjoy!
    INGREDIENTS
    1 cup long grain rice (187 g) (I used medium grain)
    2 cups (473 ml) water
    2 tsp Knorr chicken bouillon powder (or sub for 1 to 1 1/2 tsp salt)
    zest of 1 medium lime (3 g)
    2 to 3 tbsp (30 ml to 45 ml) fresh squeezed lime juice
    1/3 cup diced onion (50 g)
    2 cloves minced garlic
    1/4 cup (10 g) chopped fresh cilantro leaves
    3 to 4 (5 g) fresh cilantro stems
    1 scallion (optional)
    2 tbsp (30 ml) oil to toast rice

    I love how you use food before it goes bad. I do the same thing. I used to put together “fridge” casseroles. Whatever was leftover at the end of the week when I cleaned out the fridge I’d try to reuse whatever was salvageable . Some of my children’s favorite meals were created that way. But when they asked if I could make it again I’d say “Well it depends on whether I have the same leftovers and can remember what I did.” LOL

    You have to be the most "I'm using what I got and I don't waste past cooked broth or anything else" chef I have very seen. Love the thoroughness of cleaning your bowls and not using other dishes when not needed.

    Just completed this recipe and ohhhhh my...the entire apartment had the most wonderful fragrance of this dish. I used basmati rice this go around.

    Omg I love how professional and cheerful you sound! I can tell you really enjoy cooking for your lovely family! You used all the correct terminology, “fold, simmer” etc. and even your tips were wonderful! I actually love that you dropped the cup into the rice lol it made you more relatable and I got a little giggle out of it lol great video and tasty recipe!

    Thank you for adding the weight amounts of ingredients. This makes it totally clear . There are some good kitchen scales that are not expensive; they make cooking consistently a lot easier.

    Definitely gonna try for dinner tonight! BTW dinner tonight will be all 3 of your recipes...charro beans, cilantro lime rice and picadillo. I'm a mom of 5 and never enjoyed cooking because, well I wasn't good at it. My mother rarely cooked growing up so I never learned. But having a big family I had to start somewhere. Your videos really have been a blessing to someone like myself. They are easy to follow and delicious! Thank you!!!

    Tonight I made creamy chicken enchiladas with cilantro lime rice. I cooked as I watched your video..lol. I wanted to send along a tip I thought of while you were "zesting" the lime. And I tried it tonight.. I used my potatoes peeler to skin the lime. It worked perfect! Supper was amazing and I'm also excited bc I received your cookbook this week. Time to try more recipes!!     Thank you for sharing - For the record, I use Long Grain Goya brand rice and never wash my rice. In the past I have purchased the 50lb bag of Jasmine from an Asian food store and also never wash it. I love you videos!

    I made this for dinner and really liked it. I tried a Rex peeler on the lime and worked very well at getting the zest with almost no pith; give that a try!

    I have never washed my rice. I was not taught to!! Good to know that the purpose is fluffier rice. I never knew that but not sure I’ll bother after all this time. I appreciate all your knowledge you add.

    I have been cooking for over 40 years & only recently heard about people rinsing their rice! I guess there is no reason for me to start now- haha!

      Rinsing the rice and letting it sit in water for 15 min, then rinse and let sit in a strainer for a bit before cooking. This makes the rice come out fluffy. Since I learned that, my rice has come out perfect every time :)

    Love you and appreciate you making these videos. I made this tonight. It wasn't bad but an hour later, I got very sick on my stomach. Just be careful when you make this and try a little bit at first to see if you can tolerate it.

    I used this recipe, but I toasted the rice/onion/garlic in a pan and then I tossed it all into my rice cooker with the scallion, cilantro stems and lime zest. I just had to adjust the water measurements to go along with the different amount of water my rice cooker needs per cup of rice. Long story short, it came out tasting great.

    I knew I should have saved the cilantro stems instead of giving them to the chickens! We had chicken tacos with the fake out avacodo sauce. Very good!

    Yummy yum. I like those ingredients. You could make a cheese cloth bag for your aromantics. But for the little that you have probably be a pain. My Colombian roommate put tomatoes, onions and carrots in his rice thanks for sharing.👍"S UP🇺🇸GOD BLESS🇺🇸
