To Make Arbi Fry
Arbi / Taro Root - 1/2 Kg
Oil - 3 Tbsp
Salt - 2 Tsp
Turmeric Powder -1/2 Tsp
Chilli Powder - 3 Tsp
Coriander Powder - 2 Tsp
Cumin Powder - 2 Tsp
Hing / Asafoetida Powder - 1/4 Tsp
Besan / Gram Flour - 2 Tsp
Rice Flour - 2 Tsp
Curry Leaves
Pounded Garlic ( Optional )
Method:
1. Wash and clean the taro roots.
2. Pour lots of water in a large vessel and add salt to it.
3. Add in the cleaned taro roots, cover the vessel with a lid and boil them for at least 20 mins.
4. After 20 mins, cool them down and remove the skin. Chop the taro roots into slices and keep them aside.
5. For the masala, take salt, turmeric powder, red chilli powder, coriander powder, cumin powder, hing, besan, rice flour in a bowl and mix well.
6. Transfer this powder mixture into the taro root slices and mix them well so that the masala coats the slices well. Keep the coated slices aside for at least 5 mins.
7. Take oil in a wide pan. Add curry leaves and saute.
8. Gently drop in the coated taro root slices and fry them for a few minutes.
9. Add garlic cloves for a better flavor and cook the vegetable for 5 more mins.
10. Once the arbi slices are crispy and golden brown on all sides, turn off the stove and serve the Arbi Fry with plain rice or curd rice as you like.
Arbi/ Taro root is a vegetable which is very commonly available in India. Arbi fry is an extremely delicious side dish which can be made easily. In this video, I have shown arbi fry in three basic steps wherein the first one is to boil the arbi, second one is to make the masala for it and the third one is to fry it. Watch the video till the end to get the step-by-step process to make this recipe easily with the ingredients that are regularly available in our kitchens, You can enjoy this arbi fry hot with plain rice or curd rice or even sambar/rasam rice. Hi, I like your recipes very much. I also prepare some of your recipes at home. The way you show us makes us even easy to cook. I liked this recipe also. I tried at home. But the coating doesn't stick to all the pieces. It even gets off while frying.Can you please suggest some tips, if any, for that.
Sprinkle some water slightly on them after you coat with the masala powders. It should work. Otherwise, mix some oil in the powder and then use it for coating👍 ❤

Yes of course, you can do the wet marinade too. But the dry one is amazing, you can see the result in this video itself😍

I have tried making this twice. First boiling it in cooker for 1 whistle. And other time boiling it in open vessel. The first option makes arbi too soft. By the time i added the masala they started to get mushy.
I always prefer cooking arbi outside unless all my open cooking vessels are filled up😊
Cooking time also depends on the size of the arbi.if you used smaller arbi reduce the cooking time by 5 minutes.20 minutes is perfect for bigger size arbis.
I tried this recipe and it turned out superb. My husband loved it.
Other method is to peel of skin and boil in.open or cooker(1 Whistle) cool and drain Add 1Tsp rava/ Rice flour to the boil Arabi and set aside .Rice flour will suck the moisture .Rest of the procedure is same add Sambhar powder along with Red chilli powder.Whike seasoning add Rahi & Hing along with curry leaves roast in Fry pan on medium flame the crispness is attained due to water evaporation.
