Easy Vegan and Gluten Free Sugar Cookie Recipe: Vintage Inspired Starlet Style Decorating Method

    Cookies
    185 g / 3/4 c vegan baking butter, at room temperature
    180 g / 3/4 c unrefined sugar
    114 g / 1/3 c cultured coconut yogurt, at room temperature (almond yogurt works well too)
    2 tsp vanilla essence
    1/2 tsp almond extract
    280 g / 2 1/4 c gluten free all purpose flour
    1/2 tsp baking powder
    1/8 tsp salt (leave out if using salted butter)
    Frosting
    95 g / 1 c icing sugar (ensure vegan if necessary)
    Water
    Optional natural food colouring
    Method
    Begin by creaming the butter into the sugar with a hand mixer in a large bowl on medium-low speed until creamy and pale in color and the sugar begins to dissolve. Next add the yogurt, vanilla essence and almond extract. Mix until just combined, but it’s ok if there is some separation, it will come together when the flour is added.
    In a separate medium sized bowl add the flour, baking powder and salt (if using). Whisk the mixture to add air and fluffiness for a minute or so. With a sieve over the wet ingredients, gently add half of the dry ingredients and mix until it begins to combine, but there will still be bits of flour lingering in places. Then add the remaining dry ingredients until fully combined, but still being careful to not overmix. Chill the batter in the refrigerator for 30-45 minutes so that the dough sets to a scoopable texture. Use a small dough scoop and make level uniform measurements (roughly 1 TB in size). Carefully roll the dough into a ball and gently press the dough between the palms of your hands to make a flattened top. This gives the cookie a canvas to decorate. Bake in a preheated oven at 180 C/ 350 F for 14 minutes or until the bottom of the cookies are slightly golden. Cool on the tray for 2 minutes before removing to a wire rack to cool completely. Once cooled, prepare the frosting.
    For one batch of icing that decorates roughly ten cookies:
    In a small bowl add the icing sugar and stir in the water 1 teaspoon at a time until the lumpy sugar dissolves and becomes smooth and drizzly or to your desired thickness. Keep as a plain color or add drops of food coloring little by little, stirring in between every few drops until the desired color is achieved. The color will fade slightly once dry so it's ok to go a shade darker. Put parchment or a cloth underneath the cooling rack of cookies. With a teaspoon add a small amount of frosting in the center of the cookie and use the back of a spoon to swirl it out towards the edges. Add sprinkles of your choice before the icing sets.
    This recipe makes roughly 30 cookies. These are good bare or topped with sugar (plain or coloured) just before baking.
