You could substitute the pumpkin for sweet potato. I’m doing that for a sauce I’m making for dinner tonight. Sweet potato, silken tofu, garlic, tamari, and some other spices to your preference. Super tasty!

You missed adding coriander leaf, i.e., cilantro. The onion and cilantro is needed for the guac. The cumin is not needed. Meanwhile, Hellmann's Vegan mayo goes well with all this. Also, any winter squash will work. Hubbard, butternut, etc.. I made a "pumpkin" pie last week using butternut, following the Libby's recipe, but adding in more spices (nutmeg and cardamom), beside the cinnamon, ginger, and clove. Obviously I subbed in Vegan ingredients for the eggs (JustEgg) and dairy (Kroger STO soy milk. My omni husband loved it.
