So for the super repetitive parts, instead of pen tooling over and over again based on the new stroke, you can just select the first pen outline (ctrl+click on thumbnail of layer) and go to Select, Modify, Expand, and the increase that by whatever the Stroke size is on the new layer, then like normal delete the stroke layer and use the paint bucket tool to add the new outline on a new layer in the color you want. Saves a LOT of time and effort.

At 10:30, what I usually do is just duplicate the original text layer, remove effects and color overlay it to what i want. Then i duplicate it, move it down 1 with the down key. Duplicate again, move it down 1, repeat, etc. Til it looks nice. Removes the need for a pen tool and getting lines close to perfect
