Perfect fillet and debone. I've worked at the fisheries in my hometown before and that's amazing how fast and good people can fillet. Especially the older guys they would put all us young guys to shame. This one old man he could cut up a walleye in less than 20 seconds wouldn't be a waste with that guy on the line.

@@Kently6161 omg dude it's common sense to remove the damn guts or the damn fish will taste like the content of fish's bile that you cut once you filet without gutting, and that's why you remove the guts including the bitter bile and its bad tasting contents... It just tastes like... Once you know how it tastes prepared without the guts you will thank me
The fish wasn't bled properly which is why the meat has some blood in it which has already started to rot which impacts on the flavour. Also use a dull knife to scale it before filleting as it will save the edge on the sharp knife since it doesn't have to cut through scales. Lastly put a towel or piece of cloth under the chopping board so it doesn't move around like that.
Okay so I have been offshore fishing recreationally, competitively, and professionally for almost 50 years so far. I live in Freeport Texas right on some of the best fishing in the Gulf of mexico, and have slaughtered every kind of saltwater fish known to man for the last 45 years. (Except halibut and cod). I have also spent a big part of my life freshwater fishing in the lakes of the Southern United States catching and eating an incredibly wide variety of catfish, perch, bluegill, crappie etc .. However.. I have never caught the northern fish. Muskies, bikes, walleye etc. I am intrigued by the walleye. Are they good eating do they fry up as good as a crappie, red snapper, bluegill, etc?
One thing about bringing your method to filet a fish before the public eye is nobody will agree your way is the right way. Or the best way. Quickest. Cleanest. Most efficient. Whatever the case may be everyone is right and they are all wrong at the same time.
Fastest? Nah, cleanest, nah, but honestly pretty good for an amateur. Which isn’t even me throwing shade. Haven’t filleted a fish since working fine dining (need to hit the water asap) so my first fish in years would be like this.
2 years working in a seafood department I've cut probably over 100 fish and that made me sad. He wasted a quarter of that fish. Fast doesn't mean good quality. Nice try my dude.

Yeah I think you messed up a bit there, especially at the end on the second fillet. Lots of waste all round - you could definitely improve your knife skills. Keep at it and don’t give up!
