Just buy any flight sim and it will teach you how to operate the aircraft. I'm just showing how to power it using the APU, nothing sensitive about this video.
It allows you to run the air conditioning when your engines ar not runing, provides electrical power, allows you to start the engines, powers up the hydraulic systems, acts as an emergency generator to run pretty much any system in case of an actual emergency, etc.

That is correct, although the crew normally leaves it selected even if they shut off the APU

shouldn't the chime be there for the APU fire test?
Normally yes, but on the A320 it only chimes when GPU is being used. In this case the GPU was not available.
What about external power? Why don’t you use that instead of APU?
Because in that case there is no gpu connected, they’d have used it if they could I guess
GPU wasn't available so I had to use the APU.
