  • People have been asking me why I left my last restaurant I was at and what's next so here is a nice little video I put together for that. Working in the restaurant industry as a cook or a chef is hard but worth it, and I hope everyone who watches this maybe learns a little bit of life lessons from this. Happy to be full time on my own stuff now, and I'm even more happy that this RUclips fam is here for the ride.
    I'm not leaving the restaurant industry forever, only planning for more but on my own time now. See you guys in the next vid!

    Worked at a fine dining restaurant for 7 years, started as a dishwasher at 19yo (first kitchen job,) and worked through EVERY position up to general manager. I shared my lowest moments and my greatest achievements with my team over the years. This video makes me very emotional as I can relate to the feeling of comradely and FAMILY , two things I had never really experienced before stepping into that building. I miss it dearly...

      @@toniodejimi3905 it was time for a change as cliche as that sounds. While it was an amazing experience I would never take back. The evident drain on my health, failed social commitments (missed weddings, birthdays, only finding the time to call my father on father's day a week before he passed)and working 350+ hours a month for a salary that equated to $3CAD/hour. And in the end we essentially closed the doors on it because we couldn't find someone sadistic enough to replace me. (It was a mutual extinguishing of the flame in the end and I remain good friends with the chef/owner)

      I was a line cook for about 7-8 months and loved the work but the environment was just too hostile. I was bullied everyday by the head chef and he told me he was doing it to make me better. I understood him but couldn't take the amount of stress and hours I had to work. It was so bad that I was a part timer working 50+ hours a week. I lost the drive to attend culinary school because I know that this is basically the norm in every kitchen.

      It's one of my favorite quotes and something of a mantra for Everytime I face a difficult choice, and has gotten me through a lot. Especially when I switched from working restaurants to working in IT, and even now as I court the idea of a return to culinary work. Kitchens taught me that the more dangerous the work, the more rewarding it is at the end of it all.

    So my wife and I were watching this video when you dropped the name of the restaurant you worked at. She recognized the name and looked it up, only to find out that while she was visiting some friends in Austin Texas she went to that restaurant. In fact it was during a time while you were still working there. During her visit she brought up that she worked in a Japanese restaurant and they gave her some samples of sashimi while she was there. That was one her favorite experiences during her trip down there. A few days after that trip her and I started dating and are now married. So it’s kind of funny that we found this video because that story was the story she was telling me shortly before I asked her to go on our first date. In short, small world.

    After 15+ years in restaurants, I quit to go into dentistry because I thought it would be easier. How stupid am I? After 32 years as a self employed dentist, I think I made the right decision.     I was a professional chef myself for 10 years. A world of stress, unsociable hours, egotistical head chefs, eccentric business owners and even bullying within the kitchen brigade. The mental and physical damage I did to myself personally wouldn't have been worth it even had I been paid a somewhat decent salary.
    I loved being a chef, shame there is greedy people everywhere not willing to pay chefs what they are worth and over-working them to the ground, literally.

      This has been my experience as and chef too. I have a high level of respect for those who put up with it because like you said, the mental and physical strain just wasn't worth it.

      I gave up more times I can count, took less than six months to be back in the kitchen. The chef life is priority over your own family and personal life. But when you have great head chef, they'll put you back together when you're broken and forge you in something stronger. My most recent experience in the kitchen btw.

    Tears running down my face after watching this man... I've been out of the industry for going 4 years... I miss it every day... I got out because I'd rather be a father than a chef. Over the passed 1 and a half years I lost that passion to keep pushing... learning new techniques or cuisines even.... I just wanna say thank you Josh... you relit the fire in my belly.... saying this at 4am while my pasta rests.... looks like an all nighter bud... thank you for giving me this drive again.

      @@sumojack99I came from a background of corporate sales. Then I switched to being a cook. Let me tell you something: you will absolutely be a family back there. Trauma bonding is real. It's nothing like being a "family" and a "team" for your corporate slaves, trying to force endearing vocabulary on everyone for the sake of forced bonding.
      In the kitchen, you'll go through literal blood, sweat, and tears. Your hands will be cut, your forearms will be burned, your feet will be tired, there won't be any air conditioning and you will pour sweat from the constant heat, and on top of it all, you're 20 minutes late on your tickets and you just ran out of prep ingredients, the servers are asking where the food is, and while all this hubub is going on you forgot about the saute and now it's ruined.
      The only way you come back from those moments is by rallying with each other and suffering through it, helping each other out, and when you get back on track and finish the day, you feel like you just fought a war, but you came out on the winning side, and at the end of the night you all celebrate like war heroes. The only family I ever had in a workplace was in the kitchen, and I can truly say I miss those days sometimes.

      @@gamby16a I hated retail. The fact that we worked on commission meant that I never really made 'real' friends, since we were essentially competing for each others' paychecks. The managers always tried to promote 'healthy' competition but they were really pitting us against each other so that we would always try to outsell each other. Retail without commission is probably much more friendly when it comes to co-workers.

    I've been a chef for 12 years and have been cooking for 17 years and honestly cooks are some of the coolest people out there. I've known so many cooks and chefs there have been some of the coolest people I have ever met we truly do work hard but at the end of the day it's really worth doing what you love and being around good people just makes it all the better. I really wish everyone could experience something like that at least once in their life.

    Josh, I am twice your age + (I think) 10 years. You have a great channel and I wish you the best. I recall being your age and conflicted about what to do. Eventuaĺy it led me from the trades to engineering school and to the point where I could make a real difference in a lot of lives. My finest moment to date was bringing electricity to an area in West Africa that had only regional generators and intermittent power before. I cannot express the feelings I had when thanked by the local doctors and teachers for so much help to them that my work did. I suppose my point is that the work you put into everything you do has a payout, sometimes far beyond what you might expect, but only if you can say, every day, that you did the best you could do. It sèms to me that that is your approach to life. Kèep it up and I reckon you will find rewards beyond anything you would expect. Good luck!

    Dude. You're cooking videos is on a whole other level when it comes to just how fun it is to watch, the good editing etc. You thought me how to cook, and how to eat better. I hated spending hours in the kitchen making food, and bought a lot of pre made stuff. Watching your videos made me want to try out others things. The more I did the more fun it was, and especially when what you cook is really good. Been watching your videos for some time now and I now know I can make all sorts of things.     People who haven’t worked in a restaurant just don’t get it. Despite the non-existent work-life balance, the downright crazy shit, the stress, the shouting there is something extremely rewarding in connecting to people through food and conversation. It’s like a war movie every day, where totally different people bond through the horrors they, we lived through in the trenches. I do software development now and I enjoy it, and the people I work with are really nice but the service I provide is not nearly as important as it was giving people food experiences for 17 years.

      tonajki, i have been thinking in the oposite way. I'm a developer too, but going towards to the kitchen life. I miss the creativity and the different contact with people that food brings, in contrast to looking into the screen and solving problems. Should i reconsider?

      Nathan Reuter man, give it a shot if that’s what you want. There’s not a lot of glamour in kitchen life though. If you can manage your expectations you might do okay. With development you can always go back if cooking doesn’t work out for you. The main reason why I chose a different path is that I had no personal life, no structure to my weeks. No pension funds, officially making minimum wage etc. It just doesn’t cut it. I am a lot more relaxed now, I have time and motivation to take good care of myself and I lost 20 kg so I’m not going back but I do miss the vibes and the laughs.

      I feel the same way about being a registered nurse. 12 hour shifts, no breaks, do less with more. I still wouldn't leave it after being one for 25 years. The people I have met, loved and severely disliked, I have learned and taken away something from each patient I encounter.

    Thank you for not bleeping out your cursing. For once i dont feel like im being forced to watch youtube like an 11 year old. And i connect deeply with your restaurant experience! I worked in a restaurant in the kitchen, as service and at the bar for 6 years and there is no better time in my life. We came into restaurant even on our off days, thats how much we loved it and bonded with each other. But you have to move on eventually. Your journey will be part of a new era on youtube, thats why you gain so much subs and views. Keep going, we are all excited to see whats next!

Most people drown in their failures and never learn from them and expects the world to repay them in some ways. People who rebounds from failures with a purpose are the ones that will go far.     Bro. The first video I saw from you was the how to make your own Ramen. At first I just thought you knew a thing or two. After watching a lot of your videos I grew to like and respect you. Thanks for sharing this part of your life to us. I have my spoonful of what it's like to work at a Restaurant and yep, it's brutal, you learn so much but yeah the environment is just Ruthless while getting unrewarding pay. The system is just not right. People who spill their soul into the Kitchen deserve so much more. The Kitchen is where Magic is crafted.

      @@laurenbray8314 unfortunately. Working in a well oiled kitchen is like this amazing serenade where everything moved perfectly in time and everyone has this sort of mental link. Yeah it's stressful but it's a different sort of stress that is actually a bit of a high. A kitchen that doesn't work well is full of frustration and you're constantly playing catch up

    This is everything. I’ve been in the service industry out of not knowing what I want to do. Lots of food service that’s broken me down but showed me that I can take it all. Lots of coworkers that actually felt like families are made through these lower jobs but I won’t ever regret any of it.

    i had to leave the restaurant industry as well to better support my family and be around, was the hardest thing i had to do and you put it all so beautifully the feelings and family you develop. i never stopped cooking and continue to push myself and learn new things, i will open my own food truck and the sacrifice will all be worth it in the end. love you josh!!!!!!!!

    Although this is an older video. This is my favorite video of yours to date. I've worked in the restaurant business for over 5 years and I can completely agree with the way you summed it up. The job is chaotic but the people and the feeling of overcoming the chaos of a Saturday night dinner rush is definitely an award in itself.     I'm training to be a chef, and this video told me a lot. I both love and hate the industry, love it for the amount of achievement and pleasure I can get from it and hate it for the long work hour and low pay. I know deep down I am a lazy person, but food has always been holy to me, everytime chef calls for service and the order starts rolling in, my back straightens. Everytime I walk in at 5:30 in the morning, I am wide awake regardless how little I slept last night, and I could really relate from this. Thanks for sharing this, made me think a lot more about my future.

    This is so inspiring. I've really enjoyed your video/style for a while now but this really hit home with me. I left my job last September to go full-time with my food blog. I worked at a french bakery before and as difficult and fast paced as it was, I felt like it taught me a lot. There's SO many little things I'm still learning to this day. You are right about that. I can only hope my channel grows to a fraction of your's one day. You've accomplished amazing things! The best part is that you're following your passion. That's why I left my job as well. It's amazing to wake up each day and love what you do.

    My mom worked in restaurants all my life and it really is such a crazy community. I started bussing when I was sixteen. Food service will teach you a lot.

    As an ex line cook I totally understand that controversy you’re speaking of: you feel like going to a war every day, but when you see your skills growing, you’re coming back for more. After several years I decided to quit, being too worried about my future. But I can say for sure that not many people have a chance to have an experience like that.

    I also worked in a restaurant and the amount of love and appreciation for each other is intense because you all work hard under preasure to fullfill your duty - a happy and stuffed customer - and grow togheter in these situations.     Thank you for this. I respect any chef here on youtube who has experience in a restaurant. It really makes a difference.
    Personally, I just left my restaurant job of two years because the stress was becoming detrimental to my health. Still, I learned a lot, and did things I never thought I would be able to do. It really helped me to have some confidence in myself.
    I'm new to this channel, but you definitly gained a sub after watching this. Keep up the good work buddy!!

    3:50 dude you hit that freaking thing on the nail I use to work at my family’s place for 8 years and it was a war zone everyday I worked that place in the kitchen but you all still built a connection even after it all to everyone else it may sound so crazy to work so hard and make yet so little but you still put on your boots and keep going back because you love it and I respect that

    I went to culinary school. Got me a fancy degree in baking and patisserie too. I am now a Starbucks Barista( so that was 30 grand and two years thrown away). I don't regret where I am I just didn't need to go to a fancy school to achieve my goals. I am not mentally built for a restaurant some people are. But working at starbucks has actually taught me a lot and the stress and hours have mentally prepared me for anything. I don't have any regrets. Many of my friends have 3 jobs and work in the industry or they had to leave but I am here. It might take me longer to get to where I want or need to go but I will get there and am happy for it.

    100% true, but how many people actually even realize this? People feel like being fake is "normal" now. Personally, I feel like the majority of people I meet are fake as hell. There aren't very many people out there who will be truthful and honest. The bond you have with people who are real and genuine and aren't afraid of telling you the truth no matter how "mean" it may be will be one of the best relationships you'll ever have.

    i've grown up in the kitchen under a mexican household, and i always remembered since i was
    5 years old that i'd be in there helping and watching how things are made and enjoyed by others. i've had other hobbies come and go like football and music but nothing stuck to me like a pb&j sandwich more than being in the kitchen cooking for customers or my own family and friends. Knowing that your young just like me make me feel at peace cause i know the cooking community has some great and humble beings in there. thanks for the inspiration JW!

    That was completely out your element, unrelated to anything a youtube guru would teach, it's downright bluntly profane, it's so honestly raw that I can still hear the cow mooing, but thanks.
    That was the most real, insightful, and wise video I've seen on this entire channel. Probably the best so far where I didn't learn how to make anything but I left with an insightful perspective on how harsh and cruel the restaurant world can be, what friends you meet on that journey, and also what potentially lies ahead.

    i am in tears. i wanna be a chef in future and my family isn't that supportive ti that idea. its not like i am really good in the kitchen, i am just slightly average. i thought i will never be able to achieve this dream of mine and had given up for years, but seeing this ma living a life that i dream off bought me back on the track. i have been cooking regularly after being inspired by him. i really wanna thank him cause if someday i become a chef its gonna be because of him. just him existing is giving me all my motivation. thanks a lot joshua weissman

      Keep up man! You can do it! Im a chef and you have to know that anyone of us were born knowing how to cook. Some started earlier than others. You can do it but you have to be committed. My best wishes to you! And btw i have 2 advices: before you invest the time (and money) get a job before (or at least while) you study culinary arts. You will know if its for you. cause many guys i know realize that it wasn’t for them cause it is a really big time demanding job and they don’t have time for other things or family. (That’s ok too) 2nd advice: have critical thinking, try to know the whys and the science behind cooking (chemistry, physics, etc) it will help you in your thinking processes (look for books like the ones of harold mcgee) and most importantly be humble and willing to help others. The kitchen its a team-work job, thats why i dont like chefs who doesn’t recognize this when the restaurant its awarded.
      Im saying you this cause i would love someone to tell me this when i went into culinary arts.
