I have lived and studied in Bikaner (Rajasthan), your singer Reshma was also from same place. During my stay I have enjoyed this dish a lot. This is one of the signature Royal dish of Rajasthan. Any feast is incomplete without Lal Maans in Rajasthan. It was mostly prepared when Rajput kings used to go for hunting(Shikar), camped for several days in desert and their cooks used to cook this Lal maans. The beauty of this dish is that it is always eaten after 12-15 hours after preparing so that all the spices and curd(Dahi) gets matured. It tastes double yummy the next day. It is always better to prepare this on Saturday evening and to be eaten on Sunday afternoon.
I learned Namkeen gosht and mutton/chicken karahi from your channel. The dishes are so simple and delicious. Thanks to RUclips for allowing us to exchange our recipes inspite of having a hostile border situation since 1947. I think only food can bring peace ☮️ between the two countries.

Bhaiji, I tried this recipe like thrice after seeing several videos of Lal Maas on YT especially Ranveer Brar's, that's how I got to know about methania and I specially ordered it to prep this delicacy but somehow I couldn't infuse that authenticity and flavour because my mutton pieces became very hard despite cooking them on low flame. The other time they got over cooker aur gosht bilkul hi haddiyon se alag ho gaya tha. It got better on the 3rd ocassion because I tried a short cut of giving it two whistles along with slow cooking and it really turned out well. Now I am gonna try it in your style soon. Before I leave, I must tell you ki aap ek bahut hi behatareen chef ho yaar, aapki dishes , explanation, science and logic behind using ingredients is always spot on. Aapki vajah se meri kitchen mei namkeen aur karahi aaya aur ab mei un dono ko banane mei expert ho chuka hu 🤠😘, Thank you! Bahot khoob, Afzal bhai.... I am from Rajasthan, infact very close to Mathania itself. I must say this is a very authentic recipe... except that tomato is not used in the traditional recipe. Personally, I don't like tomato. At home, we use Mathania mirch both in powder form, and also a handful of whole (sabut) Mathania mirch presoaked in warm water. We remove the seeds and add the whole soaked chilli along with the powdered chilli. Agar copper ka bartan na ho, to mitti ki Haandi mein bhi ban sakta hai. Try zaroor karein.
