Lola sometimes sautéed onions with garlic & occasionally w/ a few slices of ginger. At times towards the end, cut -up potatoes or boiled eggs are added. I do not add brown sugar. No MSG. I saw in RUclips that Sprite or 7-up is added. Have tried that recipe. It tasted good as well. Ricky, you are a wonderful person: be it a husband, father, & son-in- law. Hopefully, you will be able to travel to the beautiful resorts frequented by tourists. Just make sure to chose the right season so you will fully enjoy your trips. Our adobo with garlic, onion bay leaves black pepper vinegar soy sauce and oyster sauce too. Boiled then when it's half cook fry the meat when done frying add the sauce from before you boiled it this is our way in my province Pampanga. 👍🙂.

Cooking adobo varies from region to region and even from one household to another. The basic ingredients are meat (chicken, jpork or both), garlic, pepper, vinegar, and soy sauce. Sugar is added towards the end to balance off the acidity of it all. Instead of sugar some people use pineapple juice from concentrate with a little bit of pineapple chunk pieces (hence they call this style Hawaiian adobo). Some don’t put ginger but many in the Visayan region do. Pepper can be whole, ground, or both. Some “extenders” are added to increase the volume of adobo so as to feed more people in the family because meat alone can be costly. These “extenders” commonly include potatoes, banana saba type, sweet potato, boiled peeled eggs, sayote, etc. My grandma’s style is my favorite but anybody can keep on experimenting until one come up with his own favorite version. Adobo has a lot of different versions. I noticed she forgot the bay leaves. Bay leaves is a basic ingredient for adobo. For extenders, you can use potatoes, regular eggs, or itlog ng pugo & saging na saba or cooking banana, same kind they use for turon. In the end, they all taste similar. Don’t forget to boil the eggs first.

Everyone says I'm a good cook... Maybe bcoz I studied cooking back then... Adobo is very simple although some people changed the way they cook it... Search in YT and you'll know what I mean... But here's the simplest but original way of cooking ADOBO.... But during the world war 2 they don't put soy sauce and just salt to taste it. According to what I read. For 1 kilo of pork or chicken... Use 1/4c Vinegar & 1/4c Soy sauce. 1c of water & Add whole pepper. But ground pepper is also acceptable. It depends how much you would want to taste it. 6pcs of crushed garlic. 2 tbsp of sugar. Just combine everything in a pan. (water, chicken, vinegar, soy sauce, pepper, sugar.) Cover and let it boiled until the water reduces to a half..... Originally, msg or vetsin is put to make it tastier but now, knorr chicken or pork cubes. After an hour of cooking it... separate the soup in a bowl and put just 2 tbsp of oil and fry the chicken for 10 minutes and then put back the soup again and wait until it boils and presto... it's done. Here are the other ingredients but it's optional. You can put chili powder if you want it to be a little bit spicy or 2-3 chili pepper and 3-4pcs of laurel to make it smell yummier. Boiled eggs and potatoes and hot dogs as well. 🥰🥰🥰

Ricky try my adobo recipe for a change. For every (1) kilo of pork, add (1) cup vinegar, (1/3cup) soy sauce, (2) laurel leaves , pepper corn, and plenty of garlic. Boil the mixture until the meat becomes soft and tender. Then simmer until the liquid ingredients are absorbed by the pork. Continue to simmer, add water if you want more sauce. When everything is cooked, separate the sauce from the pork. Fry the pork . When its a little brown already add the sauce back to the fried pork. Thats it. I dont add ginger . I noticed that your mom in law added sugar. If you add sugar that becomes pork ASADO already because the mixture becomes sweet. Bananas are added for extenders only. Adobo should taste garlicky and little sour bec. of the vinegar. Not sweet . I hope your mom in law wont be offended w/ how I cook my adobo. Just give it a try. Of course every Filipino has his own way of cooking adobo. Try it 😋

The color of the adobo will depend upon the type of soy sauce you use. Here in the Philippines the dark soy sauce is common but now you can find light soy sauce.
Choice cut kasi yan. You can choose to have legs or wings or breast. It's not whole chicken. In the supermarket,you can choose a pack of legs or a pack of wings or a pack of chicken breast.

Brown sugar is brown because most of the molasses is still in the sugar. The moscovado sugar the sugar thats almost an unprocessed sugar and have the most of the molasses in it still.

I only use dark meat chicken (legs and thighs) when I cook chicken adobo. Just like Erica’s Nanay. The dark meat chicken is much more tender and flavorful than the breast.
Hello, so the story behind the extenders like potato, Saba banana, egg etc is that the family is so big and meats are expensive to buy, extenders are a must to filled up everyone tummy while equally shared the meat products. So the new generation just adopted the idea of cooking the extenders with their adobo. 🫶
