My husband and I in NC had a very traditional southern wedding. We had a desert table with traditional southern cakes except for the NY cheesecake! We had 2 coconut sour cream cakes, 2 10 layer chocolate cakes, 2 red velvet cakes, 2 NY cheesecakes and 2 hummingbird cakes. It was beautiful and delicious! All the cakes were made by southern mother, aunts and a friend. I made the cheesecakes and hummingbird cakes. I did 3 things different you might try to the hummingbird cakes that made them the most popular of all the cakes. I used coconut oil and added toasted coconut to the frosting and mixed crushed pineapple to the frosting. It was, as you say, "AMAZING"! I can't wait to try the dried pineapple flowers! Also I'm hooked on your videos! Your cake batters are the best I've ever used!

Tip: Mix cream cheese in a separate bowl then mix the butter and powder sugar together. Once you have done that then incorporate the mixed cream cheese with the mixed butter and sugar and of course your vanilla. People do these steps backwards. This method works because mixing the butter and sugar first coats the sugar in butter fat and this creates a barrier between the sugar and the water in the cream cheese sugar naturally wants to pull that water out somewhat deflating the cream cheese. That's what makes cream cheese frosting runny the final frosting is thick and smooth and stable enough for filling cakes and piping

I’m always so amazed by the amount of sugar there is in American types of frosting🙈 I usually add ~100g of sugar per 300g of cream cheese, and I though I had a sweet tooth!
But the cake!!! It’s absolutely wonderful, thank you for sharing!!

august gray yes American every dessert and not only desserts are so so sweet. I hate that too. I usually cut the amount of sugar in half. This time everything was fine though with the amount of sugar. It is just the right amount in batter. Haven’t tried the frosting yet.

I have never made a cake before. This recipe was my very first try. I've made some bread though, which I think the experience helped a little. It was my girlfriend's birthday, and this was her favorite cake, so I tried. It came out perfectly. I followed every instruction in this video, very precisely, and it worked. Thank you for the recipe. During the process, I realized I didn't have enough butter, or any cinnamon, oops. I used a 3/4 cup of ghee i had left and a splash of heavy cream instead, oh and nutmeg to sub the cinnamon. So, not quite so precisely at all, but it worked. Thanks! Excellent recipe.

It's so comforting to see scenarios that I've experienced (while attempting to make some of your other cakes) actually HAPPENING! I made this AMAZING cake yesterday for the first time for my best friend's birthday ! It was a show stopper and everyone had seconds, so I will be doing this way more often. Just in my experience yesterday - I made 3 x 8" layer cake - the frosting was way too much and it get's too soft I used 1kg of icing sugar and didn't get the firm texture - so I will use the cold cream cheese and less butter next ;-) - I did the pineapple flowers as well very awesome and easy too. Thank you John :-) XX

Thank you! I baked the batter in one 9” pan and two ramekins. Haven’t made the cream yet but we already ate the ones in ramekins. They came out so so fluffy and delicious. I imagined a bit chewier texture but it came out just so airy. The larger one came out overbaked a little. Will make the frosting tomorrow and will see what the ready cake will become. I guess it will come out delicious still.

You can easily cut back on the sugar in the cake. I used 2/3 of the sugar and it was more than sweet enough for me. The banana and pineapple hold alot of sugars aswell. For complexity I added limejuice and some rum, also a bit more cardamom and allspice.
    Thanks for the recipe!

I made this for a birthday and it is truly delicious (and I am not a huge pineapple fan). It's very moist. The pineapple flower idea is brilliant. Your little cake reminded me that I used to bake with my Czech grandmother and she always let me make a miniature version of the pie she was baking. It's a great way to get kids interested in cooking. Oh, and being Czech, my grandma really did wear a babushka! She even called it that.
