    用竹蒸笼来蒸蛋糕,只要时间和火候控制好,几乎是不会失败。因为它的材质能透气,蛋糕就不会累积太多蒸汽变重而塌陷。不过因为竹蒸笼的空间只适合蒸像这样小碗的蛋糕,如果要蒸一般的蛋糕模具的话就会顶到盖子了。要用不锈钢锅蒸的话,请参考我们之前分享的蒸蛋糕视频。那里有分享很多蒸蛋糕的心得。

    ⚠️注意注意⚠️
    1. 建议用同一种材质以及同样厚度的模具来蒸。因为材质和厚度不一样导热程度会不一样。比如铝导热比较快,如果和其他材质的模具放同一锅蒸的话,用铝模具的蛋糕可能已经蒸过头出现塌陷的状况了。
    2. 火候和时间只供参考,请依您的火炉自行调整适合的火候。
    3. 要用汤锅来蒸的朋友请参看我们之前分享的蒸蛋糕视频。这个视频分享的只适合竹蒸笼。

    无意间找到你的视频然后跟着食谱做了。只不过我是做多一倍,然后分成两个中铝模具。蒸的时间也是差不多一样。除了颜色不知道为什么淡淡的没你的那么漂亮,出来的成品好吃。喜欢用天然食品做的食物。感谢你的分享!

      你好,可以的。紫薯粉的分量可以大约2汤匙,不够颜色的话可以自行再增加。

    Not sure why i use a normal cake mold to cook big cake, it volume up but shrank by half! Hope you can advise. Still tasty thanks to your recipe.

      May I know how long did you steam it ? How big is your mold? Because different size of the mold should have different time to steam it.

      您好,照理来说是可以的。不过我还没自己亲自试过换成金瓜泥的食谱,无法给您明确需要调整的份量。你可以试看用回一样的食谱,只是把紫薯换成金瓜看看。

      你好,是可以的,不过蛋糕体没那么高而已。7寸四方模应该要用5粒蛋的食谱了。
      温馨提醒,这种没用泡打粉的蒸蛋糕需要拿捏好火候和锅子的透气度。如果是第一次做的话,建议先尝试2粒蛋的食谱,成功之后再把分量提高。食谱分量可以到这里调整 bit.ly/3cQO005

    Hi Shahira. I love both your pandan and sweet potato purple steam cakes. I think they look really beautiful. And am sure they taste really delicious too. Will definitely try making them.
    May I know in this recipe 4eggs of AA grade used. How many eggs should I use if grade C eggs of 55g or 60g? Thank you for sharing ❤️

      Hi, glad you like these recipes. You can use 5 C grade eggs for this recipe. As long as the batter is not too watery. If the batter is too watery, you can slightly add some cake flour.

      不建议哦,因为再加面粉进去的话可能差不多要变面团了。你要这样做的话必须要自己调整一下食谱了。

      可以,不过要用2或3粒鸡蛋的食谱。还有,紫薯受热时间长短颜色会变得不一样。

      1. 建议用同一种材质以及同样厚度的模具来蒸。因为材质和厚度不一样导热程度会不一样。比如铝导热比较快,如果和其他材质的模具放同一锅蒸的话,用铝模具的蛋糕可能已经蒸过头出现塌陷的状况了。
      2. 火候和时间只供参考,请依您的火炉自行调整适合的火候。
      3. 要用汤锅来蒸的朋友请参看我们之前分享的蒸蛋糕视频。这个视频分享的只适合竹蒸笼。

      准备面糊的方式一样,不过要用烤戚风蛋糕的方式來烤。不过建议先试做2粒蛋的6寸模食谱。

      🙏恳请第一次想要尝试用这种方式蒸蛋糕的朋友先读一读(有点长):
      1. 我不敢担保您第一次使用这个方式就能成功。所以请先尝试两粒鸡蛋的食谱,等您成功之后再把食谱份量调多。
      2. 最常见的问题是蛋糕在关火后会塌下来变成蛋饼。这是因为太多水蒸气累积在蛋糕体散发不出来,导致蛋糕体变重而塌陷。只要适当的调整火候或将锅盖开大一点就能解决这个问题了。
      3. 由于每一个锅子的聚热以及火炉的火候都不一样,所以我无法一一给您很明确的指示。视频里分享的火候、时间和盖子开多大都只供参考而已。
      4. 建议使用有玻璃盖的锅子,这样才能观察蛋糕的变化。一般上,蛋糕在发到最高点后就会开始回缩了。蛋糕抵达那个状态后只需再蒸多5到10分钟就可以关火了。
      ⭐这不是最容易成功的方式,但却是最简单方便的。一旦您掌握了自家锅子和火炉的个性后,要失败就变得有点难度了⭐

      我会发现这个方法是因为有一次在我用竹蒸笼蒸7寸的蛋糕时,蛋糕意外发到把蒸笼盖给顶开来,盖子留了一个缝。我本来以为会因为盖子开了导致失败,反而那次是我第一次蒸蛋糕大成功。之后换了锅子蒸都一直失败,应该有10多次那样吧。真的是万念俱灰欲哭无泪肝肠寸断😭.......光吃蛋饼就吃怕了😨。等这些负面情绪过完后,脑子里就突然有灵感想起第一次用竹蒸笼蒸蛋糕时盖子意外开缝的事。过后就尝试用盖子开缝的方式蒸蛋糕,情况是有很大的好转不过还不算成功。再试蒸了几次后,熟悉和掌握自家的锅子和火候了,才蒸得出比较像样的蛋糕。

      你可以用纸杯的,烤的话大概要30-40分钟。用160度。这只供参考请依你的烤箱做调整。
