Could be that we learn from our parents. Go back even to the 1950s and families used much more of an animal. Marrow, lungs, brain, hocks , fish purchased whole and beheaded/gutted at home , all processed by grandparents and or parents as the kids watched/ helped. Since the 1970s more and more meat was processes and clean.. Just a theory, my views.
