    Ingredients:
    Lauki 1 pc
    Garlic cloves 8-9 pcs
    Oil to brush
    Oil 1 tbsp
    Jeera 1 tsp
    Onion chopped 3 pcs
    Garlic chopped 1 tbsp
    Green chilli chopped 1 tsp
    Ginger chopped 1 tsp
    Tomatoes chopped 3 pcs
    Salt 1 tsp
    Red chilli powder 1 tsp
    Turmeric powder ½ tsp
    Coriander powder 1 tsp
    Coriander chopped ½ tbsp
    Green chilli chopped 1 tsp
    Garlic chopped ½ tsp
    Water as required
    Coriander chopped ½ tbsp
    Method:
    Prepare and Roast the Lauki:
    Take a lauki (bottle gourd) and peel it. Make small insertions all over the lauki and insert garlic cloves into the insertions.
    Brush oil all over the lauki.
    Place it on a gas flame and let it roast until the outer skin is charred. Ensure to turn it frequently for even roasting.
    Prepare the Masala:
    Heat oil in a pan over medium heat and add cumin seeds (jeera). Once they crackle, add chopped onions and sauté until golden brown.
    Add chopped ginger, chopped green chilies, and chopped garlic. Cook well until the raw aroma goes away.
    Add chopped tomatoes and salt. Cook until the tomatoes become mushy.
    Scrape and Cook Lauki:
    Scrape off most of the black charred part of the lauki to avoid bitterness, but leave a little bit for the smoky flavour.
    Cut the roasted lauki into big pieces and further cook it on the gas to ensure it's cooked well from all sides.
