I'd bet the floor is "dirty" only from scraps from the current fish or batch. Even in Brazil, industrial slaughterhouses have very rigorous hygiene, no doubt a premium fishery in Japan will have even higher standards.

I thought Marlin was one of those fishes you don't want to be eating much of, if at all? Its a giant fish that feeds on other fish and accumulates toxins after all. Plus I've always heard that it doesn't taste particularly good. and that flesh is just a really unappealing splotchy grey and pink color..
Interesting Culture. However I wonder how long our Bountiful Oceans of this planet can sustain a World Population of 8.2 Billion People. Just think about that. *.2 Billion, with a Capital B, estimated living in the Earth in 2024. This World Population is expected to rise another 2 Billion in the next 40 years. I think this Earth is very much Overpopulated and Food Shortages will be a Breeding Ground for War and Conflict. I never have eaten Sashimi as I prefer my fish cooked. I assume it's delicious for those who like sushi. Enjoy it while you still can.

Had some smoked marlin last night - just a few morsels. It was heavenly and hopefully not toxic enough to alter my life expectancy.
