Would you happen to know why no matter how I select my gradient map that when I paint on the next layer it paints a solid color with no gradient? Ive tried resetting the file a few times and its a pretty simple process so not sure what I could be doing wrong here.

It might not be the gradient that's the issue, but your brush. You should be using a soft brush, otherwise the gradient really wont shoe up well in the stroke. I recommend Photoshop's default soft brush.

I don't know if It could be of any help, but it happened to me too, and It was because I didn't invert the layer
