Ingredients: 3/4 cup water 2 tsp instant dry yeast 2/3 cup milk 4 tbsp granulated sugar Pinch of salt 4 cups flour 4 tbsp butter For the Butter Layer: 2 1/2 sticks European butter (282g) (butter is the most important thing for the perfect croissant so avoid using butter that softens too quickly) Instructions: In a bowl, whisk together warm (110F) water, yeast, and a pinch of sugar and let it rest for 5-8 min. In a large bowl (preferably of a stand mixer), add flour and make a well. Add sugar and salt over the flour. Add water, milk, and yeast mixture to the well. Mix them well until combined, for about 3-4 minutes. Add the room temp butter and knead the dough using a stand mixer or by hand for 8-10 minutes. Cover the dough with plastic wrap and let it rest for 10 min. Then knead the dough for an additional 5-8 min. Then one more time cover the dough with plastic wrap and let it rest 5-7 min and knead the dough 5-10 min until the dough perfectly smooth. Cover the dough with plastic wrap and let it rest in the fridge for 3-4 hours. Place the dough onto a lightly floured surface, divide it into 14-16 equal pieces, and roll each piece into a ball. Roll each ball out into a thin 5-6 inch circle, transfer it on parchment paper, top with softened butter, then layer the other circles and gently stretch. Repeat the process by topping each layer with butter as shown in the Reel. Cover with plastic wrap and keep in the refrigerator at least 7 hours or better overnight. Roll the dough into 22-24" circle. Using a sharp knife or pizza cutter, cut the dough in half both directions for four equal wedges. Cut each quarter into three 4-inch triangles, or smaller according to your preference. Using a sharp knife, make a ½-inch cut in the 4-inch side of each triangle and roll the croissant as in the IG reel. Place onto two baking sheets lined with parchment paper with 3-inches between each croissant. Repeat with each piece of dough. Gently cover with plastic wrap and let rest at room temperature for 1 1/2-2 hours, until doubled in size. Preheat the oven to 400F and bake for 20-25 min, until golden brown. Remove from the oven and let them cool. Pipe some raspberry marmalade. Serve with coffee. Bon Appétit I colored the croissant for a decorative appearance!
