Ube Custard Cake & Almond Custard Cake by Mai Goodness | Flan Chiffon Cake | Sponge Cake

  • A melt in your mouth custard or leche flan mixed with almond or purple yam flavored chiffon cake that your family will love. It can be made easily at home as it includes simple and complete instructions for beginners in baking.
    Ube or Almond Custard Cake
    Ingredients:
    Caramelized Sugar:
    • 1/2 cup of light brown or white sugar (1/4 cup on each pan)
    • 2 tbsp water
    Leche Flan:
    • 4 large egg yolks
    • 3/4 cup (200ml or 200g) evaporated milk or fresh milk
    • 2/3 cup (200g) condensed milk
    • 1 tsp lemon or calamansi juice
    • 1 tsp vanilla extract
    Chiffon Cake
    Egg Yolk Mixture:
    • 4 large egg yolks
    • 1/4 cup + 2 tbsp (80g) granulated white sugar
    • 1/4 cup vegetable oil or canola or palm oil
    • 1 1/8 cup (150g) cake flour
    • 2 tsp (5g) baking powder
    • 1/2 tsp (2g) iodized salt
    • 1/4 cup + 1/8 cup (100ml) pineapple juice or orange soda
    • 1/2 tsp ube flavor
    • 1/8 tsp almond flavor
    Meringue:
    • 4 large egg whites
    • 1/4 tsp cream of tartar
    • 1/4 cup + 2 tbsp (80g) granulated white sugar
    Baking Pan:
    7x3 inch round baking pan or you may use a 9x3 inch baking pan for the whole mixture
    Baking Temperature and Time:
    160⁰C for 1 hour to 1 hour and 15 minutes
    Costing:
    Cost of ingredients = P227
    Overhead cost (40% of ingredients cost for elect, fare, gas, water etc) = P90.80
    Total Cost: P317.80
    Yields: 2
    Net Cost per piece = P158.90
    Selling price per piece: P250

    I did this recipe yesterday. So delicious. I just don't know how to show u the picture. Thank u for sharing. I made both the almond and ube flavor. Medyo nag adjust lang ako sa dami ng eggwhite.     Hi me again ang hirap hanapin yng mga Baking Pan sa Ebay, lng ako tumitingin halos wala rin iba mayron nmn but frm China 1 month cya bgo dumating🙄🤦‍♀️ kya nung nasa Pinas ako bumile nko sa Divisoria mga Ingr. ko for baking. Ask klng hnd ba pwde gumamit ng electric kc may diperencya kamay ko pag-nahahalo😔mas sanay ako everytime na magbbake mabilis para sakin. Thank you again for the Video and simple recipe. Meryenda klng nmn cya gngwa mahal d2 mga Cake katumbas na satin ang buong cake ung price nya grabe. Mahilig ako mag bake at magluto. Tpos ako ng HRM so naggawa ko nmn mga napag aralan ko.       Pag chiffon cake lang naman hindi puede gumamit ng electric mixer. Kamay talaga or else walang volume ang cake mo at matigas. Nakaka burst ng bubbles ang mixer, yung ang iniiwasan natin.

    Gumagawa ulet ako ng custarf cake now at nagustuhan ng family ko..kaso twice akong failed s caramelized sugar ngaun..huhu..if glucose gagamitin ko..ilang cups ang ilalagay ko s pan?

      Pag hirap lang mag caramelized ng sugar use corn syrup or honey or maple syrup or glucose. 1/4 cup

      Pag hirap ka sa sugar, use corn syrup or honey or maple syrup. Di na kailangan tunawin.

    Kung gagawin kong ube flavor yung whole mixture..1/2 teaspoon of ube flavor ilalagay ko?

    Hi Mai - praise the Lord Jesus for you and thank you for sharing all the goodies. I've been watching you all day and is there anything else you don't how to bake? Please open a bakery in my area I live in Los Angeles. Also, do you know how to bake gluten free? So many people now have allergies with regular flour. Please add this to your list of plans lol and you will be very much appreciated because you're a good pastry teacher.

    Hi po mam pwede po ask ksi di ko lam king sna ako hahanap ng corn syrup dito sa saudi nakita ko sa goggle na ang pwede substitute sa corn syrup ay honey .pa advise nman mam mai ksi lagi ako nasusunugan or madala matigas at ngbubuo yong asukal

    I just transcribed the full method/instructions of these recipes (Ube and Almond flavors), and it is very time consuming to do, but I guess it is worth it. No wonder there is no written method/instructions included because of the so much work involved in making this very yummy dessert. I can almost hear from the sound of your voice that it can get very tiresome in making this recipe. Thank you for your hard work in putting these together and sharing this recipe to everyone.     Hi ask ko po kung pwede gawin ahead of time yung leche flan batter? If so, paano po ang storage and gaano po katagal?

      I haven't tried pero puede siguro 1 day ahead of time na naka fridge. Then mix lang ulit bago ilagay sa baking pan. Eggs and milk kasi ito, delicate at madali masira.

    hello po. i tried your recipe sobrang sarap po nya and hindi talaga matamis. kaso nun binaligtad ko na sya nagcrack sya sa middle. paano po kaya maiwasan un sa susunod? thank you in advance

      Dapat dahan dahan lang ang pagbaligtad kasi fragile ang leche flan. Try mo ulit, minsan kasi naalog lang yan or wait ka pa na lumamig para magpantay ang ibabaw ng chiffon, kasi mag shrink yan ng konti at magpapantay yung ibabaw. Pag naka umbok kasi ang ibabaw ng chiffon at binaligtad mo, magka crack kasi uneven ang base na chiffon cake.

    Hello Ms. Mai Ilan minutes po dapat irest yng chiffon (wala na sa baine marie) bago itaob?
    Para sigurado Hindi babagsak ang leche plan.

      Thank you Sis. Pag electric up and down, pag gas range oven bottom heat. Dont forget yung water bath para hindi matigas ang leche flan.

    Hi miss mai...gagawin ko yan...sa puto flan ginawa ko yan hindi nagdikit...pagtaob ko magkahiwalay sila...hehehe...

      Hindi ko pa kasi na try sa puto yan. Pero dapat dididkit unless hindi mo na mix mabuti yung puto mixture mo.

      Sabay ang pag luto dapat ng leche flan at puto mixture Sis ha, hindi niluluto muna ang leche flan kasi hihiwalay talaga yan. Caramelized sugar sa ilalim, ilagay ang leche flan mixture then ilagay ang puto mixture sa ibabaw at saka ibake or steam.

      gamit ka na lang corn syrup para hindi mo na kailangan lutuin. ilagay mo lang sa baking pan and then ibuhos mo na yung leche flan at chiffon.

      Pag nakita mong nag light brown at firm na ang ibabaw ng chiffon cake. Mas madaling maluto dito ang.leche flan kesa sa chiffon. Kaya natin nilalagay sa water bath para hindi masunog ang leche flan habang hindi pa luto ang chiffon.
