Because this is a scripted legal drama that's not supposed to be accurate at all. People watch it to be entertained, not bored. If it were realistic, nobody would watch it. In real life, lawyers aren't classy, a list models dropping witty one-liners and closing 7-8 figure deals by throwing files around.
It's called a verbal contract and while it is legally binding the legitimacy of it can be called into question quite easily as there is no physical proof. If you make a verbal contract you want kept it's best to do it in front of witnesses or record it if you can't put it into writing.
