    My mother would do canning every year out of our garden and we had some chickens also. My childhood is filled with the sound at night of popping jars. Our job as the kids would be to gather all the glass jars that had been hanging for months over the picket fence between the house and the garden and wash them out in the galvanized tub filled with rainwater. I hated that job because they always had spider webs and spiders in them. lol Then she would sterilize them ready for canning. We always had fresh canned vegetables, sauces, and stock to last the year. We also had to help pluck the chickens. We always said if anything happened like an apocalypse, we would all head to Mom's house because she always had plenty of canned foods. Just watching you do those six jars brought back to many memories of my childhood.

    I love fresh chicken broth! I always freeze a few ice cube trays of fresh chicken broth, toss them in a freezer bag and use them for homemade chicken & vegetable soup. During my bouts with '19' that was how I survived. My taste buds were trashed but I knew it was both healthy and tasty. I agree, crock pots are so helpful when cooking the bones. Watching this video made me hungry.

    Yummy. I don’t can but do make broth in my crock pot with left over chicken bones. I’ll even use bones for rotisserie chickens. Bag in the freezer and keep adding bones until I have enough. Best broth ever. Thanks for the canning tutorial. Your family is quite lucky to have you. 🥰

    Bones can be pressure cooked to soften them. They can be crushed and added to pet snacks or put in the compost bin/pile.

    I always brine my chicken too. The last few times I have cooked chicken I brined it in water with smoked sea salt for at least 24 hours. OMGosh, the smoked sea salt adds such a delicious smokey flavor! 😋🤗😍💜

    I use to love to can when I was around your age or maybe a little younger but now that I'm older I can't or don't have the desire to do it anymore. But I do love home grown and can stuff. One year my husband and I had canned sucker fish. It was delicious. Was alot better than tuna.

    I love doing my own stocks, like chicken, turkey, & ham. Sometimes I will add the onion, carrots & celery, other times I won’t. Especially during the winter, when making those comfort foods. The homemade chicken & noodle soup is so much better than from a can, and u know exactly what it has in it. Oh there is so many things tht u can make using either one of the “stocks”. Great job Steph, many, yrs ago canning was such a huge part of the day. And then it was like folks got to busy with life or some just didn’t wanna learn how. And now I’m hearing so many talking about them canning their own foods and I think it’s wonderful. I never had a daughter tht I could show these things to, but now I have a lil granddaughter.     Steph I sometimes roast the chicken bones in the oven to get them brown then boil them to make the stock it adds a nice roasted chicken flavor

    You can also freeze it and put it in ice cube trays then you can have it handy to add to meal prep

    Hi Steph! Another interesting and educational video. You always answer my questions during your videos, by clearly explaining the process. My mother canned and the pressure cooker always made me nervous. I’m still not comfortable in using one, wish I was. ❤(Sheila T)

    Just to let everyone know if you are cooking on a gas stove you do not need to turn down the heat early or move it from the burner when done like you do on an electric stove because electric stove takes time to lose the heat but gas is instant. Two days ago I canned 28 quarts of stewed tomatoes from my garden which took about 12 hours from start to finish (washing, pealing and cutting everything up and canning) and I'am 80 years old.

    Cooking any bones makes them brittle. They splitter. Hard bones you see for dogs in most stores are processed in a way they are extremely hard to break down. But some dogs are just naturally chewers and will chew them until they break or chew them until the dogs mouth bleeds. Cattle bones from the butcher are what a dogs can have. Do your research to see what is the best bone to give a dog. Although veterinarians don’t really recommend them. They are not wild anymore and their teeth have adapted to easier to eat foods. That’s why dig kibble is made in different sizes for different size of dogs and different ages. Just a little bit of information for those that are interested.

    I would really like to do canning. However, I don't have any room to store it. I have a rambler home without a basement. A two car garage yes, but my husband is the soul propritor of it.. it's his man cave. 😂

    To think women used to do this way before we had air conditioning. I did not grow up with anything but fans, and it was miserable because our bedroom was in an attic. My parents made it into our bedroom. It was nice but hot.

    Chicken stock is made from bones, while broth is generally made from flesh.
