  • Hello and welcome back to my kitchen!
    I made this leek and mushroom quiche (feel free to add any additional ingredients you like!) with a poppy wholewheat shortcrust pastry and it was DELICIOUS! The crust was flaky, tender and buttery and the filling was rich and creamy and very tasty.
    Ingredients:
    Pastry: (I used a 30cm dish and usually make slightly extra pastry so I can make a tomato cheese and basil pie!)
    150g plain flour
    150g wholewheat flour
    200 salted butter
    75g toasted poppy seeds
    1 egg, 1 egg yolk
    Ice water (you will need approximately 50ml, but add extra/ use less accordingly)
    Filling:
    300ml double cream
    4 large eggs
    200g mature cheddar cheese
    2 TSP onion powder
    2 TSP garlic powder
    2 TSP dried parsley (I ran out for the video)
    2 TSP mixed herbs
    Salt and pepper to taste
    2 leeks (wash each layer individually)
    150g mushrooms
    3 spring onion stems
    Salt and pepper to taste
    3-4 garlic cloves
    100g cherry/plum tomatoes
