Between the extended universe to the books and comics, he left for various reasons. From Qui Gon's death being the cause to him having to resolve a civil war on his homeworld caused by his brother. But I think that Qui Gon's death is what caused Dooku to forsake the Jedi completely. Since it literally took Qui Gon dying for the Jedi to realize the Sith was back. When Dooku had been warning them for years.
Two things bothered me about TOTJ 1) Kenobi's hair. He's seen with his classic AOTC hairstyle but is already during the clone wars. We see he has his classic clone wars hairstyle when Anakin and Kenobi meet Ahsoka for the first time so how did he suddenly grow his hair out?? Also I forgot the name of the jedi master but i think it was Ptera Sinube? But either way, his lightsaber was white in the clone wars episode when Ahsoka lost her saber but now it's Blue?

Nope, nothing in Tales of the Jedi suggests that. That is pure speculation we have no reason to believe. Just like comics have been retconned before(like Yoda’s saber isn’t burned) this is also another. You can make up any reason it won’t change that screen canon is higher than comic.
Tales of the jedi is a platform to tell Ashoka's story for Darth Felonius.
