Just picked a nice big bowl from a neighbor who gave up sugar and says she doesn’t like fruit now!! Lord please don’t ever let me lose my love for fruit!! Feel so blessed to have those delicious figs. Over $150 worth if I were to purchase fresh from store/market. I dehydrated most of them. I love to throw them with dried strawberries in my oatmeal. Yesterday I made a fig and strawberry fruit cobbler with the fresh fruit. Yumm!! Figs Thank you for the video. I had no idea you could can them. Those canned figs look so good. My baby tree has given me two whole figs this year. They are available in some Farmer's Markets. I hope I get a chance to can some. Mom used to add thin sliced of lemon to her figs; those were just an extra treat when you found one. Wanda, those jars are just gorgeous!
Wanda and Danny, your fig trees are amazing! Mine are only a couple of years old, so still bushes. Have you heard of a steam canner? It's for water bath canning. I love it. It uses a small amount of water so saves on water and electricity. I can no longer lift the water bath canner because of the weight of the water. I "bailed" water for a while until I found the steam canner. You use the same recipes as water bath but are cooking with steam. Thank you for all of your tips and tricks!
When I was a child we climbed Mama's fig tree every summer. By the way your 4 to 1 ratio makes perfect hummingbird nectar. Just sweet enough to bring out the fig taste.
I've seen yt videos of people who water-bath in Europe and they use a kitchen towel, just one layer, in the bottom of the water-bath. Thanks for telling us not to pack them in, and to use vinegar each jar. I do not tip my jars to get the water off the top, when pulling them out of the water-bath, because then the liquid inside could get underneath my lid as it is trying to seal. I'm learning more and more that canning with water is just not desirable, with fruit. I'm glad you're using at least a light syrup. I'm convinced with my canning that a medium syrup is best. I never did want the added sugar, and I guess I could use xylitol instead of granulated sugar, but the fruit is just not satisfactory without a syrup. I tried, and it just didn't work. This is an excellent video. My mother always canned our figs . Our tree was so huge ,we had to use a ladder to go around the tree and pick all the figs. I can ,freeze and dehydrate my figs today. Thank God for all our blessings.❤

My fig tree is the size of yours and is completely loaded this year. Not ready to be picked yet but soon. Mine are a different variety they stay green. Sweet and delicious if I can get to them early in the morning before the bees and birds get up... looking forward to getting some on the shelf this year. I made your mock strawberry jam with them last year... delicious!
I like fig jam, though the whole poached figs are nice too, and a little less sweet. I make a semi-candied lemon (slices, with the skin) slow boiled in sugar until the peel is translucent. If there's excess syrup, I save that off. I then blend the cooked figs with the lemon slices and it makes a very tasty jam.

Thank you for this information. We mostly quarter our figs and dehydrate them. We use them for any recipes we would have used raisins for or just eat them dried. They are excellent in fig bread and oatmeal cookies. Do you use these in recipes or do you just eat them as they are?

Great video! The first time I had whole cooked figs was at a restaurant in Buenos Aires, Argentina . They had a slit cut on the side that hid a half of a walnut. Mmmm good. I thought that I hated figs cause the only figs I ever ate was in a cookie called a Fig bar. Don't know if they still sell them but they were so sugary sweet and the cookie was soggy , inedible.

There’s a 100 year old Italian honey fig tree in my Momma’s yard. She’s made amazing strawberry fig preserves for the last 40+ years.

In my country figs are mostly traditionally sun dried, than threaded on a cotton twine and hanged in a cool, dry place. Fig jam is also wonderful:)))
Well that's a different way to dehydrate other than a dehydrator or tray out in the sun!!

Ah. So while the lemon gave the unique flavor, it was also her way to add the acid for safe water-bath canning.

My figs are producing and I needed to know what to do with them. Thank you. Unfortunately, my family isn't fond of figs.
I saw amish can everything waterbath...3 hours to 4 hours for things we pressure can, so doing figs as long as you do wouldn't be a problem.
The leaves are edible, too.
I like them pickled. Last year a bear sat up in mine and had a picnic. Broke alot of limbs so I had to cut it back.

You need to check with your manufacturer. I have a glass top GE that has no problem handling canning and water bathing.
