    Yes, Jirby uses lighter fluid. Yes, Jirby uses kiln dried wood. Yes, Jirby puts his briskets on the smoker before lighting the fire. Yes, Jirby starts with "dirty smoke," not just clean blue smoke. No, Jirby does not use just black pepper and Kosher salt. But it took Jirby becoming #1 in the BBQ world for anyone to believe him. Not only has Jirby broken the rules, but he is honest enough to tell us that the people who wrote the so called BBQ rules never followed them themselves. It was BS from the very beginning, and I thank Jirby for using his #1 BBQ pulpit to become the #1 BBQ BS buster in the world.

    @jirby @bbqrat Total respect for your work ethic. Your parents should be extremely proud.However much money you are making, it’s not enough compared to the joy you are bringing your customers. Keep grinding.

    These guys put to rest all the nonsense particulars about smoking a brisket. Fuck the "rules" of brisket smoking. You can't argue with their success. Hard too beat #1
    This video puts rest alot of the mysteries and mayhem surrounding brisket smoking. They make it enjoyable as a backyard pitmaster to just make it an enjoyable experience. Thanks for the videos and the cool ass way you guys do your thing. Takes all the stress out when you guys are so chill about what you do.

    I'm very surprised. Usually they say never use kiln dried, especially never burn light fluid with the meat already on etc, just goes to show there is no one size fits all and it's best to find what works for you

    I still cannot fathom that you use lighter fluid! I understand that you are doing amazing work, and are #1, but I'm still shocked at the lighter fluid. Please, keep doing what you do, it's amazing!

      You can easily program your temp to be 30 degrees less than what it reads out
