It's #AprilisforArabFood and I'm kicking this month off with a very special episode of Sahtein where we learn how to make Mansaf (منسف), an iconic dish made for celebrations and large gatherings. Yes, Mansaf! The official dish of Jordan, loved across borders and and a dish that Fayzeh has truly mastered.
Don't be nervous! Mansaf is actually incredibly straightforward to make. You will just want to give it the time it needs to become perfect!
If you aren't familiar - It's slow cooked lamb in cooked yogurt served with rice and crunchy almonds- and there's nothing quite like it. After eating a big plate or two, napping on the couch with a "mansaf coma" is so real!!
Fayzeh, a Palestinian chef and caterer based in Jordan, invited me to her home to learn how she makes her delicious mansaf for her family and for mine. This is just the first in a series cooking with Fayzeh, who is a major inspiration for me.

Ingredients (Adjust how much you need for your guests or taste preferences) :
Oil
onions
Cardamom pods
Bay leaves
Turmeric
Sweet clover
Almond slivers
Lamb in bone
Yogurt (see video for types)
Long grain rice

My husbands farther was born I Gaza but his family were made refugees in the 50s and so his dad grew up in Qatar and with mensef being a more western Palestinian and Jordanian food it’s not a meal known to his family. His mum was British and god rest her was an incredible cook but she had never heard of mensef. The first weeks we were married he cooked (he is a very good cook mashallah) I had traveled to be with him and he didn’t let me lift a finger. When I eventually was allowed to make him something I made him mensef. We have it every week allhamdullah

Thanks so much for watching! The spices I saw her use were Cardamom pods (lots), fresh Bay leaves, Turmeric on the rice, and **Sweet clover** which gives it that a rounded savory quality and has a very distinct scent/taste. You could also use a *bit* of an arabic seven spice mix which will give it more life :) Let me know if you have any specific questions!

I wish I could smell it across the internet. A simple yet lovely dish, the yogurt marinades and tenderizes the meat. Could beef or chicken be used instead?

Clarify again, what can we replace jameed with? I live in Romania, there's no way I can get that here. I heard sheep yogurt+starch or Turkish Ayran? Am I correct? I had mansaf in Al-Quds restaurant in Amman, I'm still craving for it :D
Hello! Thanks for your question :) So here, she uses a few different yogurts for depth of flavor, so we can do that as well. I'd suggest using regular yogurt or sheep yogurt with a little bit of corn starch (this thickens it) and water and keep stirring it while it slowly cooks to prevent it from splitting. You could also add some turkish Ayran/yogurt drink to this if you can get it. The goal is to have a smooth, cooked liquid yogurt that takes on the flavors of the broth :) Let me know if this helps or if you have any other questions!
