I just made this today. I like the smell and it taste so good. I wish I doubled the recipe. I used 3 different spreads: peanut butter, liver spread and cream cheese. It all tastes good, even my 5yr old picky daughter loves it!

Just as a heads up: Stevia is not Whole30 compliant. From their website: No added sugar, real or artificial. This includes (but is not limited to) maple syrup, honey, agave nectar, coconut sugar, date syrup, monk fruit extract, stevia, Splenda, Equal, Nutrasweet, and xylitol. If there is added sugar in the ingredient list, it’s out.

Hi there! Yes, you can use avocado oil or EVOO instead of the vegetable oil. You can also make the bread without the stevia or sugar, although I do prefer the flavor. I hope you enjoy!
I just made this and when it cooled I ate half the loaf - pieces dipped in heated butter and honey and cream. So yummmmy, almost like a french toast. Thank you for my new favorite bread. I subbed flaxseed powder for psyllium and didnt soak the chia seeds, also honey for the sugar. Could any of those be the reason why it came out cake like? Perhaps more flaxseed powder than the psyllium is needed (I did 1:1) or soaking the chia seeds?
I’m so happy to hear you enjoyed! The texture change is most likely due to omitting the psyllium, which gives this loaf its structure (the chia seeds actually don’t need to be soaked). Dipping the bread in honey and cream sounds ammmmaaaazing!
Amount of baking powder and salt was not mentioned. It looked significant as in well over a teaspoon of each. I would like to try the recipe. Please advise.

Hi there! While it's a dense loaf and won't have much of a rise (since it's yeast-free), the baking powder does help it rise slightly. Be sure to work it gently once it's in the pan so that you don't compress it too much. I hope you enjoy!

Hi Lupita! You can't taste the coconut flour in this bread, but I do suspect you can use almond flour only. However, I haven't tested a pure almond flour version. Let me know if you give it a try, and I'll also make a note to test it!
Hi Margaret! I haven’t tested applesauce in this bread so can’t guarantee the results, but I fear it would affect the texture since it’s denser than oil.
*That's a BIG Fat NO to Canola oil! And NO to ANY SEED Oils!* Canola and any seed oils will cancel out the "healthy" of this bread. That's why I would never be vegan. I think I will replace that safflower oil with coconut oil or ghee or butter. This popped up on my feed because I'm keto, although dirty keto. 😂
