It's the hap happiest time of the year. Made another 50 Christmas sugar cookies. I live in Florida but have a hunting cabin in Tennessee. I took the cookies with me to the cabin. I was eating a Sugarfree Quest bar. The 5 friends with me said they would never eat that sugar-free crap. I then informed them the Christmas cookies they had been snacking on the last 4 hours where sugar free. Again, I showed them your channel on RUclips. two of the friends confessed they have blood sugar issues. and never knew they could eat real homemade desserts. Merry Christmas.
Yes it is! Your story made me smile! It is so cool when you can show people that healthy stuff doesn't have to be nasty. Thank you for sharing my recipes and my channel. 😁 Maybe they'll be believers in healthy low-carb food. Now Santa Claus, I'm not going to be able to help with. Merry Christmas! 😁🎄
My Mom called these cookies pecan sandies. They were supposed to be baked flat, but mom rolled in a ball to bake. I was the cookie/confection sugar in the bag shaker. 🥰🥰 Definitely on my to bake list for Christmas.
Awesome! You had the fun job...Well, I can tell you you won't be disappointed in these! They were my favorites of all the ones I made. Can't wait to hear what you think 😁🎄
Well I just made these cookies Victor and they are delicious. I tweaked the recipe a bit. I doubled the cinnamon, and I melted the butter because it was easier creating a more malleable dough ball. I saved a tablespoon of pecans and blitzed them until fine. Mixed them in with some powdered sweetener. I rolled the cookies in powdered sweetener first, then powdered sweetener + pecans, then powdered sweetener again. Definitely saving the recipe and making again. 👍👍
I first had these one year when my friend's great uncle Elmer made them..within the family they were known as "Elmer's balls".....yes they are known by many names. Gonna make these and have them with a nice cup of my hot cinnamon tea. Should be awesome. Merry Christmas to you and yours and thank you for all of your hard work. I look forward to the coming year, can't wait to see what you come up with next!
Oh that's awesome memories! Merry Christmas to you and yours! 🎄 These are my favorite cookies I made.. I look forward to it too! Starting January 1st I'm going vegan! 🤣 Just kidding! No chance of that happening 🤣 I've got some pretty cool plans for next year! Looking forward to some great new things 😁
Get some vanilla beans, put them in a jar and cover them with a high proof vodka. And just for the record, vanilla isn't made with beaver goo. It has, in the past, been used in vanilla flavoring, but the price of the stuff is so exorbitant that it isn't feasible. From the All Recipes website: Castoreum is labeled by the FDA as "generally recognized as safe." And because of that, companies aren't legally required to disclose when they use castoreum, often instead referring to it as "natural flavorings" in ingredient lists. But there's a significant chance that you've never had castoreum in your food, and likely never will. Vanilla vs. French Vanilla: What's the Difference? Due to the nature of where it's produced, castoreum is hard to extract and involves anesthetizing the beaver and "milking" its glands. Because of this, according to Fenaroli's Handbook of Flavor Ingredients, only roughly 300 pounds are produced annually. Instead of being put into desserts like baked goods and ice creams, the castoreum is often used in the perfume industry to add sweet scents to products. So it is possible that bottle of artificial vanilla extract contains it, but the odds are very low. Look to your makeup cabinet for the infamous ingredient instead.
@@tkmccoywvthere's a little more to it than that to make a truly great vanilla, but that is the basics.. And yes, it's just good fun, although that used to be the gold standard for artificial vanilla 🤢🦫
You did it again! Another delicious recipe! 😋 Can you believe it’s almost Christmas again? Is it me, or is time flying? It’s hard to believe that it’s almost Christmas again. I’m still not ready yet, are you? lol
You mentioned you would list how to make these with your Keto flour? Looks like you forgot it. I mostly need to know how much of your flour to use and if it changes the recipe any. Thanks for doing this. We're starting cookie production this weekend.

You could try four times the amount of almond flour as the coconut. Not sure the texture will be the same, but it should still make a good cookie
