You have to add liittle bit at the time and let the rice absorb it. Then add more. To finnish it off add some parmesan and butter when the rice is already cooked and of the heat.

An Italian would go mad if served this! You do not mix 'mare e monti'! In other words, seafood dishes should never have cheese added.
