These incredibly moist and soft muffins are made from freshly harvested Japanese pumpkin, offering a naturally sweet and rich flavor in every bite. Perfectly spiced and tender, they’re the ideal treat for a cozy morning or an afternoon snack.

Preheat the oven 350C / 177C
🧡Ingredients
•3 cups fresh Japanese pumpkin purée (about fresh pumpkin, roasted and mashed)
•3 cups all-purpose flour
•1 cup super-seeds / a.co/d/hG0Aclh
•1 tsp baking soda
•2 tsp baking powder
•1 tsp ground cinnamon
•2 tsp pumpkin spice
•1 tsp salt
•2 tsp vanilla extract
•1 and 1/2 cups brown sugar, packed
•3 large eggs
•1 cup canola oil (or melted coconut oil)
•1 cup milk
•1/2 cup heavy cream
🧡Maple sugar glaze ( optional )
•1 cup powdered sugar
•1/4 cup maple syrup
⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑⭑
Bake for 20-25 minutes, or until the surface is firm to the touch and a skewer inserted into the center comes out clean.
