Summertime Vegetable Stew: Greek Soufiko

    Ingredients
    4 potatoes, peeled and cut into rounds
    2 eggplant, cubed
    2 zucchini, diced
    2-3 carrots, diced
    2 bell peppers, diced
    3 onions, finely chopped
    16-24 ounces canned tomatoes
    4-5 garlic cloves, grated
    1/4-1/2 cup olive oil
    salt, to taste
    freshly cracked black pepper
    1 Serrano or Jalapeno pepper
    2-4 tablespoons dark Balsamic dressing
    1 heaping teaspoon dried oregano or thyme
    Instructions
    Place the egglant in a colander and sprinkle it with a generous amount of salt. Set it aside to drain its bitter juices for about 30-60 minutes. Rinse and pat dry.
    Heat a large pot over medium heta and add the olive oil with the onions. Cook until soft and golden. About 10 minutes.
    Add the garlic and warm through until fragrant.
    Add all of the other vegetables to the pot and season with salt, pepper, crushed red pepper flakes, and the tomatoes.
    Mix and cover the pot. Cook for 10 minutes.
    Add the Serrano pepper and reduce the ehat to medium-low. Cook until the vegetables are tender. About 30 minutes.
    taste and adjust the seasoning if needed. Add the Balsamic dressing and the oregano.
    Serve with feta, olives, and toasted bread.

    Eggplant, making do with what is available and adjusting pot size in the heat of the moment without flinching this must be what regional cooking is all about. Well done.

    This is so wonderful, truly. I used a 14" deep skillet, which brought the contents to the top, comfortably, and with the lid. Content with the simply delicious and satisfying flavors without the balsamic, but may try it in one of my many, many future preparations. Totally delicious and satisfying vegetable recipes are what the world needs more of. 😊 Thank you!

    I’m from Italian heritage and this is almost exactly the same as our dish called Giambotta. I go crazy for it! I love to eat it with some ricotta. I’ve never put the balsamic on it but I’ll have to try that cause it sounds really good. Always loving your recipes Dimitra!! 😍

    Hi Dmitra--I'm a huge fan of your channel and I've made a lot of your recipes! I particularly like making this one since it's so healthy but still feels rich and filling (especially with lots of feta on there).
    I was wondering if you would please show us a veggie stew recipe using produce that is in-season during the colder months. I'm trying to be better about using in-season veggies, and I'd love to keep making these hearty veggies stews all year long.

    I use Japanese eggplant and just cut them in 1" rings.
