This was very easy to make and I'm only 14! You don't have to be super skilled to make this. I cut the recipe in half and used honey instead so I didn't have to empty the whole pantry to make it. Making honeycomb is a very good introduction to sugar.

Since I use "lemon and honey" candy a lot for my throat (I work with my voice), for me it worked perfectly. However, next time I will give a try with the normal bicarb, I bet they will be even more delicious. My favourite use for them is to break them into splinters and use them as toppings for yoghourts or ice cream, or even as sugar to flavour herbal teas (honey and lemon give a wonderful taste). Off to the ice cream recipe! Yearning to try that one.

I've found you can make this even fluffier by adding a 1/2 tsp of cider vinegar or cinnamon infused vinegar to the sugar before adding the baking soda. The bubbles are huge :)

Nanciefy fantasitc, read the recipe through again before you try it. once the caramel simmers cook for 3 minutes only and then turn off the heat :), then in with the bicarb

juliette lavalliere great question, I froze mine. It keeps them dry with lots of crunch. Here is CA we have had some humid days over the summer and it has melted on my counter top so I highly recommend freezing to keep it crisp and fresh. I snacked on them last week out of the freezer.:)

i tried to make this and followed all the instructions but it didnt work. it tasted good but it never hardened or got bubbles. any tips? i am determined for it to work for me! :) thanks
just cook it on a higher heat or longer! You could go to another recipe that uses a candy thermometer to get an exact temperature to get it to work every time!

I'm sorry but the baking soda can't be substituted with baking powder in this recipe. It's there to react with the sugars, forming the CO2 and it crisps. It is not illegal in the UK, as far as I know as it is a basic baking ingredient. It may be labeled at bicarbonate of soda over there. I hope this helps.

I wish I had known how simple this was to make. My grandfather asked me, several years ago, if I could make some for him...I had no idea. I found a candy company in the States that makes it (it was his favorite candy- but he just likes the honey comb, not with the chocolate), and had them send some to him. There is a very popular old-school snack called dalgona in my country, that is made in a similar way - but with less baking soda! My mom's generation will probably have more memories of eating it than my peers do. We would buy one small disk after school, from these grannies selling them in front of our school building. Sometimes we lightly press down a shape cutter to leave a mark, and try to nibble on the dalgona to leave only the cutter's shape left :) I often made this at home, too. But instead of a saucepan, I used a ladle - just the way the grannies did - and covered it with a layer of tin foil to prevent the mixture from sticking to the bottom and leaving a burnt mess.

There is a very popular old-school snack called dalgona in my country, that is made in a similar way - but with less baking soda! My mom's generation will probably have more memories of eating it than my peers do. We would buy one small disk after school, from these grannies selling them in front of our school building. Sometimes we lightly press down a shape cutter to leave a mark, and try to nibble on the dalgona to leave only the cutter's shape left :) I often made this at home, too. But instead of a saucepan, I used a ladle - just the way the grannies did - and covered it with a layer of tin foil to prevent the mixture from sticking to the bottom and leaving a burnt mess.
