Ice Cream Drip Cake Tutorial- Rosie's Dessert Spot

  • In this tutorial I demonstrate how to create a three colourful mini dripping ganache cakes topped with homemade ice cream cone cake pops.

    Cream Cheese Buttercream recipe:
    250 grams cream cheese
    250 grams unsalted butter
    900 grams to 1kg icing sugar / powdered sugar
    3 tablespoons or so of milk
    This above recipe can be used to fill and also to mask a cake. It holds relatively well under fondant, but if you are looking to use a frosting under fondant I would recommend a straight American Buttercream recipe.
    American Buttercream recipe:
    500 grams unsalted butter
    900 grams to 1kg icing sugar / powdered sugar
    1 teaspoon vanilla extract
    3 to 4 tablespoons milk
    White chocolate ganache recipe:
    300 grams white chocolate
    100 grams heavy / whipping cream
    I also add about 1 teaspoon of vegetable oil to stop the chocolate from seizing once I add in the gel food colour. You can add in powdered food colour into your ganache instead and this will not seize. If you use powdered food colour, then there is no need to add in the vegetable oil.
    In these video tutorials, I normally use Bakels Premixes to save on time.
    (Bakels is a bakery grade cake premix. Another great one is Allied Mills)

    I use these butter based cakes above because they are sturdy under fondant and stable at room temperature, as are the muds.

    what beautiful cakes! would this still work if I was to cover the cake entirely in cream cheese frosting? my daughter likes red velvet cake but also wants an ice cream drip cake!

      that would be delicious, and definitely doable. I would replace half the cream cheese with butter though, just to make sure it's stable and doesn't flop / melt on you. I have that mistake in the early years.

I have a question can we add the chocolate drip over the cream cheese frosting (2 layers ) without adding butter cream or not. also I have a problem when I put the drip over the cake it syses or it does not become smooth and watery what do you recommend I don't know what I'm doing wrong

    Hi, rosie! You're tutorial is wonderful! I like ganache frosting so much. Have you used it instead of buttercream and achieve the same result? I fear that when I pour the dripping ganache on top of a ganache base it will mix up or the whole frosting will run when it's out of the refrigerator as it's pretty hot here in Manila.

    Hi Rosie! What kind of chocolate do you use for the ganache? I've tried the nestle baking chocolate compound and they always crinkle once it has dried up after a few minutes. Why would that happen? Any tips? Thank you and appreciate your advice! :)

    Curious would this be hard for someone, who has no baking skills to create a melting ice cream cone cake. Also can the supplies to make the cake be bought form grocery store or would it have to be from craft store like joanns in their baking section. thanks

      Hi Vanessa, the only thing I think you would have to purchase outside a grocery store is the cake turn table. Granted if you can find yourself a lazy Susan, that would do the trick as well. I personally believe anyone can follow these steps and create a decent looking cake on the first go :)
      You would need some cake boards (coles and woolworths sell them) and a bench scraper (if you have a l shaped ruler, that would serve well as a bench scraper to scrape down the sides of the cake)
