I can answer a couple of your questions. Shwabadi and Freshy were using FL Studio and LSE was using Ableton Live. FL Studio is more common because it's cheaper. I wouldn't recommend it as it works completely different to any other DAW and you will essentially be locked into using it. Make sure to research a bunch of DAWS like Reaper, Logic, Cubase or whatever you can find. I know that Bandcamp is on mobile but I'm certain there's more out there. Again, make sure to Google a few DAWs that work on mobile.

It's about $60 last I checked and it covers a lot, from music theory to how DAWs work. He even has a few modules where you're given all of his instrument clips and tasked with remaking his songs. I'd recommend the course if you don't want to spend thousands on university.
