Brutally honest review. Nice.
tbf this stall maxed out its skill points in speed and affordability
There are a lot of crap hawkers selling expensive Mala but don't manage to deliver the quality and taste. That's why i'm excited about this series, i really want to find out where the good and bad hawkers are. Yes please highlight the crap places as well.
Can't wait for him to fly to China!
But he can't upload until he gets back
Can borrow master Wang Gang's VPN hahahaha
One dish which I think alderic should review next is, Yang chou fried rice. No not the fancy dtf version or it's many spin offs, but the simple zichar version that you order with simple ingredients that when done right, is a fantastic testament to a chefs true skill and ability to use simple ingredients to create an amazing dish. This dish nowadays is haphazardly cooked in a hurried manner that results in a mushy barely fried rice with zero flavor that begs for your green chilli or Sambal to even make it palatable. Please make fried rice great again!
Petition to make mala xiangguo only series. I doubt u can try all the popular ones in a single series
dont be sorry for the ‘negative’ review of ririhong, as mentioned by others you were just being honest, and i also fully agree as the last time i had ririhong it was truly disappoint, localised to the point it lost its spicyness, numbness and flavour. cheers and looking forward to the future episodes!
Given Alderic's uncontrollable urge to comment on mapo tofu, petition for mapo tofu to be it's own series HAHAH. Would love to see your take on places like Shisen Hanten, New Station Rice Bar etc etc
Shisen hanten is the only place that make me crave mapo tofu. Shall try the one at new station rice bar
some people say that mlxg is actually a singaporean invention. the real story is that chinese restauranteurs were trying to increase popularity of mala hotpot in sg but seeing as how singaporeans tend to eat lunch really quickly or dapao food home, it's hard to serve hotpot. so mlxg is the answer to that - same flavours, but faster and easier to cook. rice media gave quite an in-depth coverage of the history of mlxg and although most people think mala = chongqing, there are enough first person accounts that show that mlxg is considerably new for chinese people too.
You should pick the same ingredient combination for each Mala for a fair comparison! Pork Belly, King trumpet, potato, egg, lotus root etc
I'll try to, for the most part. or at least a similar variety to see the different doneness.
Gotta give Ri Ri Sheng Mala Hotpot at Tampines St 81, my favourite mala
agree! i find that almost all the ri ri sheng mala stalls in general are really good and worth it.
im glad u didnt bin this episode. This adds to the realism and adds colour to your channel. Good job. i am also very critical and particular of scam mapo tofu without the minced meat.
learned alot this episode! all the cooking knowledge youre imparting makes me look forward to the next
Alderic, if you wanna give mapo tofu another try, try the stall just 2 stalls to the right of ririhong. It's called chuan wei yuan. The mapo tofu and 手撕排骨 is good stuff
I prefer true review rather than trying to squeeze out something nice to comment.
Can I suggest “A Hot Hideout” to be part of your mala series? They’ve quite a few outlets around sg & the reviews aren’t too shabby :)
nah it is just fried stuff
The best mlxg I eaten was at wisma food court, can't find one dat beats it. The chef really knows how to cook a gd mlxg, sausages and potatoes are well caramelized and the veges are crunchy, most impt the mlxg base is really savoury. U shld really give it a try 👍
Had a really good mlxg surprisingly at MBS food court, the prep and doneness was really good just take note their med 辣 can be 大辣 compared to other places. Also dont forget to get them to add some black vinegar to add even more complexity to the flavour.
U are just being honest so no need to feel bad about it. I will still continue to watch your videos even I don't even eat MLXG. Cheers!! 👍🏻😄💪🏻
😂I could hear the tone of reluctance and slight disbelief from the aunty hawker when you ordered the mapo tofu 🤣
Hmm interesting series to go for, i always wonder what make a mala dish good?
Wan Jia Ma La Xiang Guo (万佳麻辣香锅) in Bukit Batok is my favourite Mala!
riri hong may not be the best taste wise, but it will have a special spot for being the OG spot
can we have a kway chap series please alderic
So far the mapo tofu that I like is Hand in Hand Beijing restaurant.
ngl, the best mala i've ever eaten in my life is hands down the peace mansion mala - The 24h food court right below all the china discos. Its done by this friendly chubby chef with a thick china accent. The Spice/Numbness/fragrance is spot-on. Due to the close proximity of my house, I'll get a fix almost every other day. Many friends would drive down to takeaway this legendary Mala. Sadly, its now gone and the whereabouts of the chef is unknown. Unfortunately, no mala I've tried after could give me the same longing for that GOATED Mala. Lmk if anyone knows where the stall/chef is now.
btw, also really love the cafe segments
My personal fav is Mi Jie mala tang, their mlxg is decent but the mala tang is what I love. They get extra points for having a sauce bar too.
go and try dragonfly mala! Best Xiang Guo ever
Holland village foodcourt mala is the best! Queue is always long but worth the wait! Go for 大辣🥵
Do try Mala Version 2 @ JEM! One of the most flavourful/heavier base that's close to the ones in China
Mala that throws you into existiential crisis, that's a new level
7:50 , I agree with the "MA" flavor- it should be balanced or maybe even a little stronger, but definitely not reduced! Some places actually serve the MA sauce as a condiment, so keep that in mind too. I'll definitely keep watching your episodes to see when the "MA" becomes more prominent!
Just saw your Popeye ad on Tiktok. Congrats!
thank you!
I'm a mala mega fan and I only eat dala. The mlxg at s11 coffeeshop at 51 Ang Mo Kio Ave 3, #01-03 Big Mac Center, Singapore 569922 is the best and most consistent I've ever had.
Mega fan too and also only dala+. Imo the big S11 beside Jubilee has the best mala for me. But down for reno atm.
謝謝!
thank you!
The kungfu mala at Simpang Bedok is superb. Must add 2-3 eggs inside because the scrambled egg goes so well with the mala combi. I stay in the west and yes I travel all the way there to eat their Mala. Not the cheapest but one of the nicest.
Lao si chuan at Link hotel - Their la zi ji is the best of best
Try the MLXG with the pork lard ...Veronica Phua featured ot
the store at the back of the food center is the better RRH
Wan Xing Mala hotpot at kovan. They have abit exotic ingredients + healthier alternatives for noodles. I suggest putting their you tiao and duck in it. Esp the you tiao, they cook it very crispy and it soaks up the mala oil/taste when you bury it inside and it really packs a punch when you eat it.
The mala from the canteen at Hall 9 in NTU is bombz!
btw, i havent tried yet but kept getting recommended to it at times i wanted to eat other stuff and also got turned off by the queue... could you do a review on "Yang Guo Fu Mala Tang"
Same recommendation as last week, Zheng nan qi bai! Sister brand of Zhang Liang Mala tang. Bomb
Paradise dynasty mapo tofu is really good!!
bro, try 鼎鼎香 mala in maxwell, its at the 2nd last row at the back. Killer mala and very well priced.
小蛮牛麻辣香锅 - NEX FOOD JUNCTION (level 4) and mala stall at B1 food junction of suntec city! must add vinegar!
JEM Mala Xiang Guo @ Serangoon Central 😋
Hey Alderic , try Chen’s Mapo Tofu. It’s heaven!
If you really want Mala, highly recommend Chen's Mapo tofu. That is one hell of badass spiciness that I can't even take it
Try Chen Mapo Tofu 😋😋
I have a few in my list depending if i am nearby any.
1) Fragrant Hot Pot 飄香麻辣香鍋 at Food Republic 313@Somerset Mall
2) Xiao Man Niu Mala 小蛮牛麻辣香鍋 (Various outlets around SG)
3) Zhang Liang Mala Tang 张亮麻辣烫 (Yes, they sell Mala Hotpot too! Various outlets around SG)
Mala Tang is where its at. I like the one outside People's Park Complex (Jia Xiang Mala Tang).
wan xing mala at kovan also not bad!!!
Good Taste Restaurant at AMK. Brother, trust!!!
Hotpot kitchen @ JB midvalley southkey, soup and dry both veli good
harnessing your viewers' capabilities here - there used to be a mala stall at one of the coffeeshops under Simei MRT station called 大掌柜. their mlxg was THE BOMB. i mean, they deep fry their potato slices and LUNCHEON MEAT, the spice and numbness levels were ON POINT, and price was really legit. cannot locate them after the pandemic 😢 ANYONE KNOWS WHERE THEY ARE NOW PLS HOLLER AND ALDERIC PLS GIVE THEM A TRY!!
RAWR I LOVE UR CONTENT ALDRIC
Green on Earth Vegetarian Cafe Mala is good even though they are vegetarian
remember to add in the Monkey Mushroom Heads
many mlxg places here replaced sichuan peppercorn seeds with peppercorn oil to cater to local taste. The latter is less intense hence the numbing sensation is not as pronounced. RRH used to use peppercorn in its earlier heydays but later switched to oil
aside from the mala at 313 food court, wan xing mala hotpot along upper serangoon road (near kovan)
Do best cafes next, given that you've gone to a cafe after every place.
Thanks!
thank you!
You have got to try Chiming Mala @ Geylang Bahru Market & Food Centre. The place sells rather authentic Chinese food at a good afforable price. Likely due to the older population there. But man the mala is good as well. Their spiciness is good, not so much of the numbness since i think they try to cater to local taste buds.
But please do try it.
Wah 0, was only expecting 1.
My recommendation is same as last week one:
For mlxg, wanxin at kovan or the one behind clementi mall
For restaurant, old Chengdu at chinatown
good
try Wan Xing Mala at Hougang
Thank you Alderic!
Please try - Shisen hanten!
Shisen closed for reno
i googled it and it seems like its temporarily closed?
i agree with you on this one. i know they are the OG but the last time i had it (just before covid), it didnt hit the spot for me
I would love it if you can give green on earth Mala a try. There is a twist though... you will know when you are there.
A quick google of the place is sufficient to back my recommendation. Plus, its near batok.....
Please try Si Wei Mao Cai at mosque street plsssssssssssss
Please try the mlxg store at one north’s koufu. Think it’s my favourite so far.
One North MRT Koufu Mala - Best of the best.
You have to try the MLXG at Prince George Park’s Residences. Not sure if the NUS students will appreciate you trying it out at the queues are already long to begin with 😅
got one stall in the coffeeshop opposite tiong Bahru plaza is not bad
If you want an unconventional recommendation you can try the Mala stalls at NTU especially the one in Canteen 9 and Tamarind Canteen
I think those are the ones run by the NTU graduates right?
@jasonchua nope, that's A Hot Hideout which started as a standalone outlet in North Hill. The ones in canteens were run by the natives I think
@@cheongjiahao4843 Ah thanks! Heard about the NTU alumnus' mala xiang guo on the radio and thought it was that 😋
Totally agree. Had it a few months ago and it was really quite bad.
NUS PGP mala is the best one ive had
Famous chain store 张亮 at Tanjong Pagar 100am.
Beside 张亮 store SPICY CHEF 辛大厨@100AM have super good Mapo Tofu! One of the best I've eaten. 够麻够辣又香!
Hey Alderic. Can come to amk s11 and try the 又嘛又辣? My wife and i thinks its the best but lemme know what you think
I think it would be better to get some rice to eat with mapo tofu to really enjoy eating it.
Try Nature Vegetarian Delight Mala.
pls try wanxing mala at kovan!!!
Try Tai' Er mapo tofu
yang guo fu (soup version mala) go the esplanade outlet
NUS PGP Canteen ma la Xiang Guo!!! Don’t know what’s the exact name of the shop but shiok!
You have eaten so many bowls of mlxg from so many places. Why not go to the 1-2 places for the 1-2 episode ?
the more popular places usually do better. or at least serve as a better benchmark since more people would have tried it before.
1:27 Heyyyy, this is the second MLXG of the series. Alderic anyhow ah! HAHAHA 😂
first! ep 1 wasn't a mlxg hahaha
老味道麻辣香锅 (old taste mlxg) - woodlands
have to specifically say -> not the lewd kind -> tells me alot XD XD XD
but agree on the zero stars! More, more!
Definitely not a Negative Nancy, more like an Ambivalent Alderic (where RiRi is concerned)
somerset food court mala!!! piao xiang mala or smth
Lao cheng du @T1 staff canteen rmb to add in fried chicken
I can help you think of some things to say.1. They put peanuts 2. Coriander
57˚ Mala Xiang Guo @Admiralty
The great north!
"i like young tofu more" not the lewd kind DEADDD
I went to the same Ri Ri Hong stall U went but last year, it was indeed horrible.
With my gf, we couldnt finished a shared bowl, lack spice, lack ma, lack fragrance for a 大辣
Try the Mala @ Wisma food court, so far that is the best for us
Chens mapo tofu
Mapo Tofu and La Zi Ji at Shisen Hanten
