- How To Make Plum Sauce In Less Than 15 Minutes
This sauce is great and embodies everything great about Thai flavours, salty umami flavour, sour and sweet and goes so well with many snacks and starters ranging from spring rolls to prawn cakes and even Hoi Jor! This is any easy recipe with only a few ingredients and should take you lkess than 15 minutes.
This is the standard recipe so feel free to put your own stamp on it.
Here's the recipe:
🟢For the sauce:
100ml Water
400g of sugar although Chef Tou added another Tbsp to balance the salt from the brine
400ml of White vinegar
3 Plums (we used Mee Chun brand)
1 Tbsp of salt
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

Yes !!....I checked my local Asian store and they have the Mee Chun Preserved Plum...
so I'm going to make the plum sauce.

At first I thought there weren't enough plums in the recipe...but when I made the sauce there was definitely enough plums. ...I did indeed add a little more sugar.
I can't believe how good the taste is...now there is such a nice balance in the recipeI compared it with the ``Pantai brand''.......this brand is so sweet with a lot of thickener.
