- How to make Banana Brandy. I got 52 lbs of free bananas, so I thought I'd make some banana brandy. In this video I am mashing in the bananas and getting the ferment going. What a mess it was though.

Great video....great recipe! I love these kind of mashes. You know pretty much for certain it's going to turn out good, but it's that kinda mystery factor that makes it really fun to do. I've had the most fun doing these mashes.

I agree, I like the surprise. We'll, most of the time. You do have to expect some disappointment occasionally.

I normally throw my bananas in the oven to caramelize before I start the mash. Don't usually do that big of a run tho 😜
I have seen that done and heard it turns out great.
@@StillnTheClear gives it more of a caramel flavor 👍
You think spicing the bananas before roasting would be any good?
@@BeeKisses may get some trace amount of seasoning but probably lose some in the run. Give it a shot in a small batch. Thumper is usually the best for adding spices 👍

Just want to say I’ve started doing this to have fun and I’ve checked out other peoples videos and by far you keep it informative but in the same keep it real,your videos are the only ones I find relate to me and what I want to do ! Keep up the good work …

My advice of you're going to mash the peels is only use organic Bananas. Bananas are heavily sprayed with pesticides and fungicides that are not only bad for you but really can mess up fermentation.
We'll, I can't speak to how bad they might be for me, but the ferment seems to be going great. Thanks for the info.

I've read similar information about the pesticides. Bananas have been on the so called dirty dozen list of fruits and vegetables for years because of the chemicals.

you did the right thing peeling them as it makes mashing them easier without the peel, i am making this soon again as i got 6lbs(weight without peel) of free over ripened bananas that i will make into 2 gal mash, i will have to figure out how much more sugar to add based on sugar being 45ppg so ill make a rough estimate math on it, i wont bother with the peels because im sure i got most of the sugar i will ever get as they were almost black and really funky but i will give them a 1hr temp rest at 140deg F so that the inulin will convert into fructose and give me a boost, will also use inverted sugar with citric acid and if i got pectic enzymes use that as well and just regular bread yeast that has worked well up to 14% before , as for you next time you can always do the mash rest for inulin conversion then let it cool and add the peels
I understand the value in adding sugar to all of the mashed, but would it be possible to take a reading before adding the sugar, for information's sake?

I put all that blackberry brandy on oak in jars 3 ways but I’m afraid to drink it because it’s so tasty that I accidentally blacked out last time I got into it but I was super proud of my work and I got ahead of myself

You ask a floor manager if they have damaged produce you can buy for cheap since you need it en mass they usually know youre shining but honestly who cares
I told the produce manager exactly what I was doing. He was happy to help if I shared with him 🙂

On the Mountain Brandy you gave detail list with Qty's on every ingrediencies, wish you would do that with all your recopies
He literally said 3 pounds of bananas per gallon of water.
And 6 pounds of sugar for the entire mash.
There are no other ingredients…
Except yeast.

I plan on doing a banana brandy and I have a bunch of hazelnuts I'm going to roast and wondering how I should go about finishing the banana brandy up with the hazelnuts? Fermenter? Gin basket? Masarade it in the end? Ideas? Thanks!

What is the best temperature to ferment with a aquarium heater
It will depend on the yeast you're using, but typically 80f to 85f is acceptable to most yeasts.
