[Only 4 ingredients] Super easy to keep in the freezer! How to make sweet potato ice cream

    This is a fall-like ice cream recipe with plenty of sweet potatoes.
    Although the recipe and ingredients are simple, the result is a rich and satisfying taste!
    Sweet potatoes contain water, so if you add too much, they will become sticky.
    Therefore, by whisking the eggs and fresh cream before mixing, we have devised a way to prevent the cake from becoming hard and to create a smooth texture that can be left in the freezer.
    It may seem like there are a lot of steps, but it's really easy to make!
    There are only a few ingredients, so please give it a try.
    [Recipe] One 1.2L container
    200g sweet potato (peeled)
    Sugar 70g
    2 eggs
    Fresh cream 200cc
    It's okay to increase or decrease the sweet potatoes depending on their size.
    However, the more you add, the more likely the ice cream will become hard.
    ① Wash the sweet potatoes thoroughly and heat them in a pressure cooker or rice cooker until half submerged in water.
    If using a pressure cooker, pressurize for 8 to 10 minutes.
    If using a rice cooker, cook rice in time-saving mode.
    ② Remove the skin from the sweet potato and mash it.
    Add 20g of sugar and mix.
    ③ Whip the cream until soft peaks form. Keep in the refrigerator.
    ④ Separate the eggs into whites and yolks, and make meringue from the egg whites.
    Add 1/3 of the remaining 50g sugar to the egg whites and whip at high speed.
    When it starts to leave a mark, add another 1/3, and when the sugar has dissolved, add the rest to make stiff, shiny meringue.
    Add the egg yolks and gently mix until the color is uniform.
    ⑤ Add a scoop of egg to the cream and mix, repeating this twice, and once mixed, combine everything together.
    ⑥ Gradually mix ⑤ into the mashed sweet potato, and when the sweet potato paste has softened, return it to the bowl from ⑤ and mix everything together.
    Transfer to a container and freeze for at least 5 hours.
