Dumpster divers have confirmed pecorino romano in the past, so perhaps the grana padano Vito saw is actually what's in the shakers for customers and he just didn't catch it or feel like correcting him on camera.
@@overnightclassic2 I agree, it's definitely a lot. A manager from Frank Pepe's commented on Vito's video, someone asked if it was grana padano or pecorino and he confirmed that it's pecorino romano.

Apparently frank pepe uses 17 month grana padano despite what their menu claims.
