I have two Matfer pans. A 9 1/2" and an 11" pan. Both of which are made in France. The Merten & Storck is "Designed in Germany" but made in China. A suggestion: Try using little butter when cooking an egg. The butter will smoke and sizzle quickly if the pan is too hot. If the butter just sits and slowly melts it's too cold. Find the happy medium. It takes practice. Also along with the butter just use a couple drops of oil.
I got a 10 inch pan for under 20 cad from Homesense in Canada. This is a well built pan considering the fact that it is a German brand but made in China. I like the fact that the heat gets distributed evenly even on an electric stove top. Great for daily use .

what oil are you using?
I bought a 10" matfer and a 12" merten for the weight. I feel that the 12" matfer is too heavy.
Of course a 12" pan would weigh more than a 10" pan. There's more metal.
