a light gravy is not a mistake or flaw. Popeye's chicken for example makes a light gravy while KFC goes for a dark gravy.
In the south there are two types of gravy and it’s restaurant choice how they make it.
Light and dark gravy both taste the same. Imp my experience, dark tends to be more liquids while lighter=thicker. It doesn’t matter none the less

Blond or light gravy isn't a flaw. As michael mentioned, gravy is basically a roux and you can have white, blond, brown or dark roux depending on how you cook it. She's explaining why she made blond gravy. He's asking because its more likely to lack in gravy flavor (overpowered by the milk/cream) if the chef botches it and tasteless gravy is a flaw. But you can have blonde gravy that has a good distinct gravy taste from still being skilled enough to concentrate the gravy taste in the roux or dark gravy that's tasteless like Sabrina's from cooking out the gravy taste instead of concentrating it.

I’m from Texas. You can’t get anymore Southern. I find it hilarious that you chose this as a challenge. From the age of 14 I cooked this on the regular. I guess everything is a learning curve. There is no way I could cook Canadian dishes. Have no freaking clue. I have to say, some of these contestants made a grand showing! Nothing but props for the dishes they produced !

Its been 8 year since this season and its still shocks me that Michael made top six every challenge he failed at but yet wasn't bad enough to go home until this one.

I grew up eating mashed potatoes; I’ve survived on potatoes; potatoes are easily in my top 5 favorite foods in the world; I don’t see a problem with lumps in mashed at all, it adds a nice contrast of textures. I’ve had hundreds of different kinds of mash and my mom’s is still my favorite way: smooth as can be, like pomme puree, but with little lumps throughout; melted butter and hot gravy on top, it’s like eating a super thick potato bisque. Mashed potatoes is not the same thing as pomme puree so I feel criticizing the mash for having lumps while clearly expecting the purée, but not having explicitly demanded that specific dish for the challenge, is rather disingenuous.

Its called perfectionism and is a trait that quite some people have. Some on the other side have the oposite and would be considered as lazy.
Perfectionism is quite a good trait to have if you dont want to hang out in a lower class your whole life, because it helps you to improve by yourself and not because someone else tells you that you did something wrong or bad.
You’d most likely be happier that you fell short of a much higher standard than a ‘realistic’/lower standard.
if you get used to a high standard, not meeting that standard will not necessarily mean you failed.
Fear of failure does not mean the inability to face them head on.

Secret to perfect southern fried chicken is a brown paper lunch bag to apply the dry ingredients perfectly.
As someone in the “Deep South” I prefer white or tomato gravy for mashed potatoes.
And I’ve never heard brown gravy described as sweet, I wish I could taste whatever these are and just see if I’ve mid-labeled a flavor somewhere.
