    I grew up in Texas and never heard of tri-tip until I was stationed in Washington state. Very underrated piece of meat. Great looking recipe 😄

    Santa Maria style tritip is done with Susie Q. Not sure what the hell this is lol.

      Santa Maria style was here much longer before Susie q was a thing. Salt, white pepper, black pepper, garlic, dried parsley & sugar for a hickory color hue/bark. A key factor most people forget is this is cooked on a live fire, using coastal red oak which gives a distinct flavor ~ some idiot from Santa Maria
