- Top round steak, also called London Broil, is an affordable cut of steak that when prepared and cooked correctly is definitely worth more in taste than the actual cost of the meat. On today's episode, we are making Grilled London Broil (grilled top round steak) on the Big Green Egg. This is the perfect recipe for a "Steak Night" meal.

GRILLED LONDON BROIL | GRILLED TOP ROUND STEAK
1 1/2 - 2 lb. London Broil (top round steak)
1 - 2 medium-sized shallots, minced
1 Tbsp dried thyme
3 Tbsp brown sugar
1/4 cup low sodium soy sauce
3 Tbsp Worcestershire sauce
2 Tbsp balsamic vinegar
1/2 - 1 tsp hot sauce (not optional, for flavor not heat)
1/4 - 1/3 cup vegetable oil
1/4 cup water
2 Tbsp unsalted butter (optional)
I. In a jar that you can close with a lid add the shallots, thyme, brown sugar, soy sauce, Worcestershire sauce, balsamic vinegar, hot sauce and vegetable oil. Seal the jar and shake vigorously until all of the ingredients are fully combined. Place the steak on a plate and poke hole in it with a fork, both sides. Place the steak in a gallon sized sealable plastic bag. Pour the marinade over the meat and seal the bag. Make sure to get as much air out of the bag as possible. Distribute the marinade to make sure it fully covers both sides of the meat.
2. Place the bag with the steak in the refrigerator and allow it to marinate for a minimum of 12 hours or better yet overnight until you are ready to eat. On the following day (at least 1 hour before grilling) pull the steak out of the refrigerator and allow it to get to room temperature. You can place the steak on a plate. Reserve the marinade. Light your grill (or turn it on) so the temperature can reach 350°F.
3. While the grill is getting up to temperature, heat and reduce the marinade. Pour the reserved marinade in a pot or saucepan over medium-high heat. Add the 1/4 cup of water to the bag and carefully shake the bag. Add this water to the pot along with the butter (if using). Bring the marinade to a boil and stir. Immediately lower the heat to a simmer and cook for 10 minutes. When done, remove from the heat.
4. Spray the grate on the preheated grill with nonstick grilling spray. Grill the steak for 8 minutes (4 minutes per side). When done, remove the steak from the grill and tint it with aluminum foil. Allow the steak to rest for 8 - 10 minutes. While the steaks are resting, pour the sauce in a ramekin (or a few ramekins depending on how many folks you are feeding). Once the steak has rested, thinly slice the meat at an angle and against the grain. Enjoy!
NOTES
1. Make sure to marinate the meat for a minimum of 12 hours. The meat should pick up the color of the marinade.
2. 350°F at 4 minutes per side usually yields a steak that is medium. However, use a meat thermometer to ensure your steak is cooked to your liking. I personally would not cook a London Broil beyond medium doneness, but to each his own. To ensure your meat is cooked correctly the temperature inside of the thickest part of the meat should read: 125°F - 130°F rare, 135°F medium-rare, 145°F medium, 150°F medium-well, 160°F well done.
3. If using a meat thermometer, pull the steak off of the grill 10° before it reaches your desired doneness. The steak will continue to rise in temperature as it rests while tented with the foil.

London Broil is one of my favorite cuts, your recipe is legit! Sometimes I'll grill it with a thick and sweet Teriyaki marinade, or even just a lot of butter. I ate too much turkey today, but this has me hungry again!
